Their Semillon Sauvignon Blanc is a racy little aromatic white with exotic aromas of crushed basil and lychee that are followed by flavours of gooseberry, mango and passionfruit. All capped off with some lime zest on the finish to complete this supreme crisp dry white wine.

This exquisite Five Tales Sauvignon Blanc Semillon displays a pale straw colour with a bright green haze. The fragrant bouquet exudes lively aromas of tropical fruits, citrus and herbs, making way for a zesty and textured palate filled with intense citrus and tropical fruit flavours. These vibrant characters are balanced by crisp acidity, which leads this delightful white blend to a dry and refreshing finish. It has the potential to be cellared for 1 to 2 years from vintage. Suggested food pairings for this SSB include poached salmon, pan fried scallops and prawn ravioli.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. The wine exhibits a nose with lifted aromas of passion fruit, guava and exciting tropical fruits. The palate is fine with a lovely, nervy acidity and an effortlessly long and dry finish. This single vineyard Sauvignon Blanc was fermented cool and matured over three months on lees to build complexity and palate length.

The current release of the Fire Gully Sauvignon Blanc Semillon is a superb exampe of the blend. Complex and interesting with fascinating oyster shell aromatics, intense pure white tropical flavours with schisty minerally notes: powerful, vibrand and tangy, finishing fresh and zesty.
