Forester Estate Sauvignon Blanc has clean aromas with underlying richness and varietal fruit characters of lychee and passionfruit. There's a subtle hint of blackcurrant along with lime and well integrated cedar oak. There is a herbaceous thread through the wine of pea shell and nettle along with underlying wood smoke. On the palate, full and textured with a rich creamy texture. There is lychee, lemon thyme, nettle, roasted red capsicum and passionfruit along with balanced cedar oak and wood smoke.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Classic Margaret River Cabernet can be found in every bottle of Forester Estate's Cabernet Sauvignon. Showing trademark characters of cassis, tabacco, earthiness along with fragrant aroma of mulberry, black currant and dusty oak, that can only be described as exhilarating. Finishing with grace and grainny tannins, this beautiful full bodied Cabernet will reward by careful medium to long term cellaring.

Pears, stone fruit and citrus gives way to a creamy, nutty middle and fresh acidity to close.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate. Bursting lemon, lime and grapefruit dominate throughout with bright acidity, a slightly savoury line and a talc-like finish.

One of the best value Margaret River Chardonnays out there. Michael Kerrigan is doing an amazing job producing Chardonnays of elegance. Hay Shed Hill has delicate grapefruit and stone fruit flavours on the palate. And these flavours are matched with fine, minerally acidity with suble oak towards the finish.
