LEEUWIN ESTATE Prelude Cabernet Sauvignon, Margaret River

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Umamu Estate only releases their wines when theyve had time to develop in the bottle and this Sauvignon Blanc Semillon is drinking beautifully now. In the glass: Beautifully vibrant bright lemon with a still-youthful green tint. On the nose: Lifted mix of toast and honey development. On the palate: Rich and beautifully developed with a lovely warm core of buttered toast, preserved lemon and lemon curd in a terrifically textured, layered and complex wine.
