Starward Nova Single Malt Whisky

Starward NOVA is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Henskens Rankin Vintage Brut

Crafted from tiny parcels of Chardonnay (70%) and Pinot Noir (30%) from Tasmania's Piper's River, Coal River Valley and Tasman Peninsula this fine beaded bubbly spent six years on yeast lees. It was well worth the wait, being notably elegant, harmonious and fresh with pretty white florals, nougat, citrus zest and a long, dry savoury mineral finish.

Bowmore 12 Year Old Scotch Whisky

Located in Islays capital of the same name, Bowmore uses a combination of dedicated craftsmen, pure water, smoked peat and traditional manufacturing techniques to ensure that their whisky tastes the same as it did when it was first distilled in 1779. The 12 Year Old Single Malt has a nose of lifted lemon and honey that are bound together with the distinctive Bowmore smokiness. On the palate, the whisky is warm and delicious with subtle dark chocolate and peat smoke.

Crafted from the estate’s Springflat vineyard with select bunch picks, this Shiraz is made with meticulous care—hard cane pruning, shoot thinning, and up to 50% whole bunches in the ferment to enhance texture. Matured for 23 months in 100% new French oak barriques, it boasts a deep, glass-staining red-purple hue. The bouquet is savoury and oaky, with coconut, toasty barrel, mocha, and espresso notes, layered over dense black fruit. The palate is massive yet balanced, with ripe, supple tannins, concentrated oak-infused flavors, and a brandied prune aftertaste, finishing with a powerful, long linger. A bold expression of Heathcote’s terroir, this Shiraz pairs beautifully with beef or venison and offers 20 plus years of cellaring potential. A collector’s treasure from a small family winery.
