The Craft & Cos Collingwood Dry Gin is an ongoing conversation with the seasons. We are always juniper forward, true London dry style, with native and traditional botanicals.

Hand-crafted using a combination of locally sourced Riverina citrus, and traditional botanicals, our Dry Gin Murrumbidgee is inspired by the Riverina, New South Wales, the food bowl of Australia. This is the first Gin to be released in Griffith, New South Wales it is wonderfully balanced and juniper-forward, with heavy notes of citrus. A slight hint of the dryness to the palate initially, followed by refreshing citrus presence of New South Wales kelp among our list of botanicals.

Launched in March 2015, Archie Rose Distilling Co. is the first independent distillery and bar to open in the City of Sydney in over 160 years. Crafted from Australian wheat, Archie Rose Original Vodka is carefully distilled in a handmade 300L copper pot still constructed in Tasmania by Australias only stillmaker. Complex, clean and crisp, with subtle notes of fresh apple and mint, each bottle is individually marked with the distillation date, bottle and batch number, and is perfect for sipping neat or as the base of your favourite cocktail.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. Weve left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Four times distilled, made from whey, pure Australian water and charcoal filtering helps to remove any impurities to produce an ultra clean, silky smooth spirit with the finest taste. The choice of botanicals is a starting point for any distiller and its inclusion of fresh strawberries that gives this gin its unique blush pink hue. Featuring complex fruit flavours thanks to the inclusion of fresh strawberries, which are steeped together with an array of other botanicals. Created using our base spirit which is grown, harvested & distilled at our East Coast Distillery, located in the pristine Island state of Tasmania, this artisan style Hopped Gin is a combination of the 9 botanicals which include locally sourced Tasmanian pepperberries, lemon myrtle, and the renowned Tasmanian hop. We pass alcohol vapour through a mixture of juniper and hop, creating a perfect fusion of flavours. Our classic Small Batch flavour with a delicate but rich hoppy nose and a long smooth finish.
