For over 150 years, the Dalmore has set the standard in multi cask maturation. Hand selected casks, from the world's finest bodegas and wineries are expertly curated to create a sumptuous and layered whisky of legendary finesse. The 2023 release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts. The casks used to finish this exceptional dram were specially selected by Dalmore’s Richard Paterson. They rested for decades at González Byass in Jerez, where they were used to mature 30-year-old Matusalem Olorosso Sherry, before making the long journey to the Scottish Highlands. This is not the easiest way to source a whisky cask, but the extra effort makes perfect sense when the Dalmore 21 Year Old hits your glass. Seville oranges, bitter chocolate and Colombian coffee tantalise on the nose, while sweet liquorice, black forest fruits and roasted walnuts delight the palate, finishing with notes of peaches, ginseng and pear tarte tatin.

The latest chapter of this renowned collection is adorned with the signature of their Master Distiller, Kevin O’Gorman. After months of exploration, O’Gorman crafted a balanced blend of rare and hand-selected single pot still and single grain Irish whiskeys from Midleton’s exclusive inventory to create this truly special release. Matured in lightly charred ex-bourbon American oak barrels, the Midleton Very Rare 2023 Vintage Release delights with decadent flavours and a tantalising aroma. The aroma, taste and finish of this whiskey will enliven the palates of those new to this collection while taking the seasoned whiskey collector on a journey through an exciting exploration of taste. If history has taught us anything, it’s that no idea is new—but this idea, grown from an appreciation of what has come before, is a new take on an old legacy inspired by Midletons commitment for a greener future. The new secondary Midleton pack takes inspiration from the original cardboard box created for their first vintage in 1984. This original box ran from the inaugural year in 1984 until 1990. They were hard cardboard boxes lined with a beautiful golden fabric, while each bottle was 750ml topped by an old-style screw cap. In 1990 the bottle was changed to the new European regulation size of 700ml, while the oak boxes replaced the original cardboard cases. A metallic plate decorating the front of the box replaced the old, printed title on the cardboard boxes from the 1980’s. 2017 saw a new double-doored wooden box introduced, and a new bespoke bottle with the inclusion of the Midleton pen nib. Added to this, a new label adorned the bottle inspired by the original from 1984. 2023 completes the circle with the return of a more sustainable offering. The nose opens with an intricate medley of fruits including nectarines, ripe melon, green apple, and apricot. A solid foundation of pot still spices, showcasing notes of freshly peeled ginger and crushed peppercorns, work in tandem with the aged grain’s perfumed notes of dried flowers and delectable golden syrup. The oak continues to reveal itself, adding notes of vanilla, combined with a honeycomb sweetness and freshly roasted coffee beans. The palate is luscious at first with succulent fruits and a distinctive creaminess along with a herbal quality akin to camomile tea. The pot still spices add depth and intrigue as they weave amongst the floral grain qualities found lingering throughout. The charred oak’s influence continues to build over time creating additional complexity as the wood-derived spices complement the ever-present fruits of candied orange and dried apricot. On the finish the fruits and pot still spices build to a crescendo before giving way, leaving the final say to the oak tannins and antique grain whiskey.

Clase Azul is a Mexican tequila brand that has been sharing the magic of Mexican culture with the world for the past 25 years. The brand was born from a dream to showcase the beauty of Mexican traditions and land. Its iconic decanter, a unique creation made by Mexican artisans, was the starting point of this dream. The name Clase Azul, meaning blue class, was inspired by the blue agave used to make their spirits and the paint on their first Reposado decanter. Despite facing challenges such as natural disasters and financial crises, Clase Azul has stayed true to its ideals and overcome adversity. This mezcal is made with green agave, also know as Maguey Verde or Agave Salmiana, a plant native to the deserts in the state of San Luis Potosí. Agave Salmiana is mostly found in Central Mexico. It is originally from the highlands in Coahuila, Durango and San Luis Potosi, but it is now cultivated in warm climates across the globe. This agave is often used in modern landscaping, but it can also be used to produce some very unique mezcal. It's also known as “The Green Giant” for it's large size, and it can take up to 25 years to reach maturity. It is also known as Maguey verde in San Luis Potosi and potentially other regions of Mexico. The decanter itself is a work of art, hand-carved by artisans from a small community of the Mazahua people, the design on this special piece evokes a sense of timelessness and cultural heritage. Adding a vibrant touch to the decanter is the unique and colourful cap, crafted by artisans from the Wixárika culture. Handmade using a technique of coloured yarn appliqué, the decanter’s cap represents a beautiful desert landscape of mountains and valleys overflown by bright red finches. Each piece requires over three hours of meticulous craftsmanship from our artisans. Crystal clear with silver highlights, this mezcal has aromas of cooked agave, caramel, green chile, sweet fruit and freshly cut grass with more subtle aromas of wildflowers. The palate is full bodied with herbal front with hints of caramel, lime zest and clove, with a mineral and spiced aftertaste. Clase Azul Mezcal San Luis Potosi pairs beautifully with a variety of soft cheeses, lychees, plums and milk or white chocolate.

Sullivans Cove French Oak Ex-Tawny Single Single Malt Whisky (TD0289)

Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years.
