Togouchi Premium Blended Japanese Whisky is a blended release from Chugoku Jozo. Although it is blended in Japan, it is a mix of Canadian grain and Scottish Malt. Togouchi whiskies specificity is to be aged, blended and diluted in Japan. Scotch whisky barrels aging is held in a unique location, a 361 meters long tunnel dug in 1970 that offers ideal maturation conditions.

Akashi whisky is the only whisky in the world that is made by a Toji (grand-master in the art of sake making) by implementing sake-making methodologies into the whisky making process. The distil pot used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an ageing process, while its core malt (cask strength) is smooth and delicate.

Master Distiller Alex Davies of the Kyoto Distillery uses a spirit base distilled from rice and adds botanicals like yellow yuzu, hinoki (cypress) wood chips, bamboo, gyokuro tea, and green sanshō (Japanese peppercorn) berries that are designated into: base, citrus, tea, herbal, spice, and floral. Each botanical category is steeped into the rice spirit, which is then individually distilled before blending together. It is brought to proof using water from Fushimi, known for its purity. The Kurayoshi Pure Malt Whisky Sherry Cask is a boutique Japanese whisky produced by the Matsui distillery..This is a 100% malted barley whisky, sourced from distilleries around Scotland, before making their way to Japan, where it is blended with Japanese Whisky, aged and cut to proof with the legendary volcanic stone filtered waters of Tottori Prefecture. This means that the profile is brighter that you would expect in this age-range. This brings out more herbal and citrus notes while maintaining a nice complexity. Kyoya Hinata Small Batch Gin is distilled with generous amounts of juniper complimenting the piny flavour and provides this gin its signature warmth. Tokinoka Black is a blended whisky created by Akito Ueda, Master Blender of White Oak distillery, who gives us a new version of Tokinoka the blend emblem of the brand. It’s a rather more fruity nose with aromas of tropical fruits and notes of toasted oak, precedes an appealing mouth experience with the appearance of woody aromas and some notes of citrus. Made from 50% malt whisky and 50% grain whisky aged in 3 different types of casks (Bourbon, Xeres and new oak), this version richer in malt presents a very nice roundness in the mouth and combines at the same time a spicy and creamy sharp side, with a soft and vanilla finish characteristic of Tokinoka.

Aged for 12 years in sherry barrels, the Okayama 12 Year Old Barely Sherry Cask Shochu has a taste of equal parts elegant and mellow. The aging process combines the best elements from sake and scotch, creating a drop excellent for both savouring and sipping. The nose has exquisite aromas of brioche, sherry, oak, and barley. Notes of summer citrus float across the palate giving way to the soft sweetness of caramel and vanilla. A long, textured, and creamy finish.

The ‘Furu-Tsuru-Ume’ is made with Nankō Ume fruit from Wakayama. The fruit is steeped in Sake for 4 months, then aged in a tank for 2 years. It is then placed in used oak barrels for further ageing of at least 8 years. This is one of the oldest wood-aged Umeshu in the market. A rich and complex example of Umeshu with a spicy oak character on the finish, this is best served slightly chilled in a wine glass to appreciate the intense and complex aromas and flavours on display here. Once opened the Heiwa 'Furu-tsuru-ume Umeshu 10YO' will last well for at least 12 - 15 weeks, ideally in a refrigerator.
