Don Fulano Anejo tequila
Despite its long ageing, this minimum 30-month blend is not overtly sweet or oaky; it has a drier style, which is full of spice and character from its highland terroir. Cooked agave is present with a fine mixture of dried fruits, almonds and roasted coffee. There is a subtle and masked fudginess reminiscent of dark cocoa that emerges from the depth in its long and slightly dry finish.
Don Fulano Reposado
A highland tequila, Don Fulano is made from 100% estate grown mature blue agave cooked in autoclave ovens, naturally fermented in open tanks using wild and cultivated yeast, and distilled in approximately 80% copper pot still and 20% copper, double column still. The spirit is distilled to 50% to 55% then cut with demineralised water from a deep well in the distillery. The tequila is non-charcoal filtered and contains no additives. The Reposado is carefully rested in a combination of new and used French limousine oak barrels for a minimum of eight months and up to two years. This ensures that the resulting spirit is the perfect balance between agave notes and those from the barrel. A nose of red fruits, think cherries and jam with the sweetness of cooked agave further enhancing this, with delicate herbal notes providing a balancing counterpoint. The French oak influence becomes obvious on the palate, with rich caramel, maple syrup and creamy vanilla flavours. With those is fruity dark chocolate, some of the jam from the nose, although deep in the mix and gentle spiciness. The cask influence is felt yet again in the finish, where agave pepperiness quickly fades to vanilla.

Abasolo El Whisky De Mexico Corn Whisky is crafted and distilled from 100% Mexican Cacahuazintle (kaka-wha-sint-lay) corn, which has been cultivated and passed down for more than 200 generations by local farmers for its distinct and extraordinary flavour. Abasolo uncovers the deepest flavours of this ancestral corn through nixtamalization, a 4,000-year-old cooking technique never before used in whisky production, but fundamental in preparing corn as food in Mexico. While American bourbon makers use at least 51% corn and a percentage of barley, the nixtamalization process allows Abasolo to use 100% corn to make whisky. The nixtamalization process also has a direct impact on flavour, causing the spirit to open up with more floral sweetness and warmth of the grain. Made from GMO-free corn this gluten-free whisky has deep, nuanced notes of roasted corn, honey, vanilla, black tea and leather. These flavours are developed from the ancestral corn through the nixtamalization process and these flavours are unlike any other whisky.

The Tequila is then aged for five months in used bourbon barrels to give it a complex flavour and delicate aroma.
