Initial aromas for this Prosecco by Pizzini include yeasty and melon notes, as the wine opens up in the glass the nose smacks of citrus blossom, fresh lime, Wisteria flower and green apples. It is refreshingly fizzy with gentle, lemony acidity.

Sparkling shiraz is as Australian as anything, and one of the best value is from Seppelt, with the current vintage drinking superbly. Surprisingly soft and plump with ripe and giving tannins; while it's dry, there's some sweet fruit sensation on the palate that helps with dishes that have heat spikes and spice, especially Indian. This wine is a light straw colour with lime hues. The nose explodes from the glass with sweet sherbet, lemon, lime and jasmine aromas. Yeasty and earthy characters add complexity, with added brioche notes. The palate is creamy and refreshing zingy with lemon, lime acidity. The wine has lovely length and softness with a touch of sweetness but a long dry finish. Serve with Sydney rock oysters or lightly grilled scallops topped with lemon zest.
