Wild Hibiscus Distilling Co Finger Lime Gin Snow Dome
A 10 year journey in the making... This gin is the distillers masterpiece featuring suspended finger lime caviar from the distillers 80 acre farm at Kurrajong Heights. These little balls of limey goodness pop in your mouth when you bite them releasing an aromatic burst of pure citrussy gin an experience like no other! Also known as "Snow Dome Gin" it makes the perfect gift for those who are hard to buy for and has a spectacular presence with the suspended finger lime caviar swirling and magically suspending in the bottle. A super smooth gin featuring a medly of Hawkesbury grown citrus. Tahitian lime leaf and Kaffir lime leaf also grown on the distillers farm are balanced with aromatic Navelina oranges & juniper from the highest mountains of Bulgaria. Finger lime gin is hand made in micro batches of just 43L using spring water from our farm. Each bottle takes over 1 year to make and mature from growing the fruit to distilling the gin and infusing the finger lime caviar so that when you bite those little pops you get a burst of 40% alcohol gin which is different to the gin they are suspended in. Mars Wa Bi Damask Rose Gin
Floral and aromatic on the nose, fresh and soft texture with delicate sweetness, and an elegant crisp finish.The key botanicals apart from juniper berries for this gin (green tea, shiso and ginger) are grown locally in Kagoshima Prefecture in South Japan on the island of Kyushu. The original gin is blended with beautiful rose water which is made with organic and local Damask rose flower, which is considered the queen of roses.
Four Pillars Navy Strength Gin
Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Hartshorn Gin Sheep Whey
The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.
