Pioneer of the Coonawarra region, John Riddoch, lends his name to the highway that dissects the famous 'terra rossa' dominated region which is home to some of Australia's premier red wine vineyards. The fruit for this evocative Shiraz is sourced from some of these vineyards and is aged in a combination of French and American oak for 18 months to develop increased complexity. Hentley Farm is a boutique, single estate vineyard that focuses on producing premium quality single-estate and single-block wines reflective of their exceptional Barossan terrior. 'The Marl' takes its name from the fruit grown on red clay loam over marl (a friable earthy deposit consisting of clay and limestone) which reduces the water and nutrient availability producing low crops and rich flavours. True to the style, the Shiraz is layered with berry fruits with hints of dark chocolate, earth and subtle spice. While full-bodied the palate is soft with lovely lingering finish.

This wine has the classic dark cherry, dried herbs and spice aromas that you would expect from the southern part of the Barossa. The palate has intense dark berry flavours wrapped up with mouthcoating chocolaty texture ; think black forest cake. The other hallmark of this vineyard is the acidity which gives length and persistence to the palate and longevity to the wine.

With an alluring nose of pepper, blueberry, and blackberry, this Barossa Valley beauty has layers of flavour, ripe fruit, excellent balance, and enough structure to evolve for a few years.

Choosing sites that offer the greatest varietal expression, concentration and finesse, the wine then saw maturation in French oak of sizes ranging from barriques (225L) to puncheons (500L) for 12 months. The result is a foreboding Shiraz that displays notes of blueberry, blackcurrant, aniseed and balancing earthen touch. Ideal served on its own to fully appreciate the rich and complex flavours but also at home when paired with French cutlets and slow cooked duck.

Ripe liqueur cherries on the nose compete for attention with vanilla, mocha and coffee aromas while the palate is full of sweet berry fruit flavour and a soft, luscious finish that seems to persist for an age. While exuberant and lively when young, the Bishop is known to handle medium term cellaring extremely well and reward any with the patience.
