An exceptionally smooth gin that offers the gin fanatic someting different with hand picked Austalian Kakadu Plums. Adding to the complexity of juniper are Angelica root, cardamon and a seclection of other botanicals that are balanced on the palate with a medium/dry finish. Tidal Lines is made from the classic Headlands Distilling Company gin recipe and then infused with native Illawarra Plums over a ~12 month time frame.This gin combines flavours of fresh juniper, rainforest lime, Illawarra Plum, cinnamon, angelica root, orris root and many others!

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

The flavour experience opens with an initial scent of juniper, followed by rhubarb which produces a fruit compote aroma. On the palate the prominent vanilla creates the perception of sweetness that compliments the juniper flavours very well. Ginger adds a gentle spice to the finish.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.
