Tidal Lines is made from the classic Headlands Distilling Company gin recipe and then infused with native Illawarra Plums over a ~12 month time frame.This gin combines flavours of fresh juniper, rainforest lime, Illawarra Plum, cinnamon, angelica root, orris root and many others!

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

It tastes a little like berries and orange blossoms, but the newest gin on the block is a blush stunner created using native Australian ingredients. Seven Seasons Bush Apple Gin with its balanced juniper flavours and jammy notes is a pure delight, perfect for a pink-hued G&T or for mixing in a negroni.Seven Seasons heroes native Australian ingredients. Bush Apple Gin is a product of Monsoon Season, when the heavy rain starts, crocs lay their eggs and the barramundi are flourishing. It’s also the time the fruit of the bush apple is ready to be picked from the treetops.

Botanic Australis Ooray Plum Gin

Ooray Native Plum Gin is a colour take on the Botanic Australis recipe, with heightened addition of strawberry gum to compliment the rich Ooray (Davidson's Plum) flavour. the gin is steeped on Ooray Native plums to achieve a truly Australian experience. On the nose vibrant strawberry gum and sherbet with a rich and velvet plum jam, raspberry sorbet palate. Great with a splash of soda.

Boatrocker Raspberry Gin

To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. Boatrocker Raspberry Gin provides a modern twist to a classic G&T (feel free to garnish with fresh or freeze dried raspberries), alternatively, make a 'Pinky' Tom Collins by using Boatrocker Miss Pinky Raspberry Berliner Weisse instead of Soda water!

Four Pillars Modern Australian Gin

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Old Kempton Distillery Tasmanian Embezzler Dry Gin
