At Tempus Two we do things differently. We don’t follow tradition. We go beyond it. Unshackled from winemaking traditions, our Copper series makes any occasion a celebration, so we decided to make a gin from Prosecco. Rather than grain, we make our gin from Prosecco wine spirit distilled with juniper berries, coriander, orange peel and rosebuds. Delicate and floral, varietal flavours of green fruit and citrus are enhanced with the rosebud and juniper botanicals resulting in a light and elegant gin. Perfect for the gin curious or those new to gin, enjoy this simply with soda water and ice or a martini, adding dry vermouth and a lemon peel garnish.

An award winner, this tripled distilled in a copper pot and macerated for 3 days using 14 Australian native botanicals (plus one non-native). The navy strength is a citral driven Gin that has been tricked up with lemon-scented gum, ginger and pepper berry.

Distilled by Brogan herself, Everyday Salvation Gin is her Australian twist on the classic dry gin we all know. Packed with botanicals it is juniper forward with the crispness of fresh organic white grapefruit peel balanced against Australian cinnamon myrtle and native pepper berries results in a modern versatile gin great for any occasion. Tasting Note A Juniper forward punchy Australian Dry style gin. The dry citrus hit of coriander seeds is accentuated by organic white grapefruit peel, providing fresh zesty qualities of citrus with subtle hints of bitter lemon. Floral top notes of lavender, rose and orris root, with earthy undertones from angelica root presenting on the nose. The Australian native botanicals of sweet strawberry gum and hot pepper berry linger on the finish which is elongated by the nuttiness of roasted native wattle seed.

Australia first smoked gin Bushfire is a smokey, unique gin based on an original London dry gin recipe but with the original ingredients substituted for our own Australian native botanicals. The individual botanicals have been smoked with Iron Bark to uncover a rich, smokey palate with sweet hints of maple.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Some say it evolved from the traditional Tequila Daisy (Margarita is Spanish for Daisy), similar to the Margarita with more focus on lemon and lime, than the balance of orange liquor in the Margarita. Others say it was created in a Tijuana bar for the Ziegfeld dancer Majorie King. Another popular story is that it was created by socialite Margarita Sames for guests at her Acapulco holiday home. Regardless of how it originated, the blend of Tequila, Cointreau Liqueur, and lime is one of the most popular cocktails of choice.Serving Suggestions:To serve, line the rim of a tumbler with fresh lime and dip the rim in salt. And its making just as big an impact 140 or so years later, capturing all the glamour and excitement of New York City in a glass. The Manhattan has stayed true to its origins, mixing American Rye Whiskey, Sweet Vermouth, and traditional Angostura Bitters. During Prohibition (19201933) Canadian whisky was primarily used because it was more readily available. Just like its namesake, and the people who call it home, it has survived wars and prohibition, recessions and depressions. Serving Suggestions:To serve, pour Dr Onyx Manhattan into a mixing glass filled with ice, stir well, then strain into a chilled cocktail glass or in a short glass over ice.
