An easy-drinking style, taking the distillery's classically rugged character and softening it out, while maintaining the smoky and sweet notes the distillery is known for. More approachable, but still definitely Talisker. Talisker Skye was introduced in early 2015, named after the beautiful island on which the distillery resides. This expression brings with it a more well-rounded and sweet flavour profile packed with fresh citrus, sweet smoke, peppery spice and traditional Talisker maritime notes. It's matured in a combination of refill and toasted American oak casks, with a slightly higher proportion of toasted casks. Our small batch Irish Gin is rested in casks made from Juniper wood. During this time the spirit takes on a beautiful copper colour and gentle sweetness. Juniper wood and juniper berry working together, that's what makes this gin rather special.

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

The nose is full of dessert wines, a little fruitiness with a good barley sweetness. The palate is quite full with more dessert wine notes, but with cereal notes and barley, a touch of malty spice and berry fruits with good oaky tannins and little herbal notes. The finish is long with a good oaked note and more noble rot.
