After at least eight years of elaboration in the cellars, the wine embodies the perfect balance of Dom Pérignon, the Plénitude of harmony. This limited edition 2008 vintage Dom Pérignon Brut Vintage has a luminous label. With the press of a button, the bottle label with light up. 2008 was dominated by grey, overcast skies – an exception in a decade characterized by bold, generous sunshine. Just when the harvest was getting underway, the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and had truly outstanding balance. The vines were in perfect health. To the bracing acidity, concision and aromatic purity expected of the 2008 vintage, Dom Pérignon adds depth, density and complexity. The light is warmer and less harsh.

The Maker: For almost two hundred years, Champagne Bollinger has been making powerful, refined and complex wines that express the aromas of fruit in all its dimensions. In 1829, Athanase de Villermont’s vast estate just outside the town of Äy provided the backdrop for the founding of an extraordinary Champagne house - but as an aristocrat, Athanese was forbidden from engaging in commercial trade. With the recruitment of Joseph “Jacques” Bollinger, a Champagne merchant, and Paul Renaudin, a Champernois fascinated by the world of wine, the Bollinger legacy began. The Bollinger style is inimitable and recognised as such by great connoisseurs. It possesses a dense and subtle presence: a balance of the intensity of great Pinot Noirs and the freshness of Chardonnays from the Côte des Blancs. The house’s offerings are rooted in 5 tangible principles: the vineyards; Pinot Noir; magnums of reserve wines; the barrels, and time. Bollinger wines release a creamy effervescence resulting from vinifying in oak barrels and prolonged contact with the yeasts. Every tasting yields new delights that are guaranteed to transport you. The Vineyard: Bollinger has built its vineyards at the heart of the finest crus in Champagne. 180 hectares of vines are made up of 85% Grand and Premier crus and are farmed by our teams of growers across 7 separate vineyards: Aÿ, Avenay, Tauxières, Louvois and Verzenay for Pinot Noir; the Montagne de Reims, Cuis for Chardonnay; and the Côte des Blancs and Champvoisy for Meunier. Another of Bollinger’s distinctive features are the two plots of Clos Saint-Jacques and Chaudes Terres. There, ungrafted vines are entirely tended by hand and reproduced using a form of layering called provignage, preserving the extraordinary heritage from which the Vieilles Vignes Françaises cuvée is produced. Pinot Noir is the varietal on which Bollinger has staked its reputation. A demanding grape that requires care at every step, it remains front and centre because of the incomparable finesse it brings to a wine. Today, the Pinot Noir planted around the Montagne de Reims represents over 60% of the Bollinger vineyards. This also just happens to be the exact proportion it occupies in Special Cuvée! Multi-faceted and surprising, its unusually high ratio in the blends is a signature of the Bollinger style, to which it lends power, body and vinosity. In some ways, this is the emblematic wine of the domaine. It was Michel Bettane, the influential French critic, who encouraged Francis Egly to bottle this single-vineyard wine separately, with the first release based on the 1989 harvest. This latest offering was bottled after the 2017 base had spent close to one year in cask before blending with 50% reserve wines from the 2016 vintage. The vinification and aging for both vintages took place in barrel. The fruit comes from old Pinot Noir vines in a single terroir known as Les Crayères. The vines here were planted in 1946, so they are now 75 years old (vines of this age are extremely rare in Champagne). The soil is barely 30cm deep, then it’s chalk, hundreds of metres down—hence the name of the site (craie is French for ‘chalk’; crayères references chalk quarries which likely once existed here). Les Crayères is situated mid-slope with a full south-facing exposure, not far from the estate’s cellars. The old vines are deeply rooted, giving the wine a classic mineral energy that weaves its way through the powerful, layered Pinot Noir fruit. The deep concentration is a product of the ripeness and low yields that the site and its ancient vines confer. The 2017 base is a tribute to the greatest sites of Ambonnay and the Egly-Ouriet domaine. Houses that emphasise blending may consider a 100% old-vine Ambonnay like this to be too intense; Egly gives it to you full throttle! This release has both profound depth and incredible finesse. It’s still early days for the nose (if you open it now, give it time), while the palate is already stunning: a layered yet chiselled, mineral mouth bomb. The dosage is only 2 g/L, and it’s invisible. As always, this unique expression of a singular terroir is built for food and aging. Give it two to three years, and it will be even better.

Champagne Bérêche et Fils Grand Cru Aӱ (Disg. Nov )

Champagne authority Peter Liem writes that “among all Champagne villages, Aӱ is the most historically esteemed… Today, its terroir is still just as storied, and its grapes are sought after by winemakers across the region.” It is perhaps no surprise that the poet Alfred de Vigny declared in 1853 that “the mousse of Aÿ radiates happiness”. From a Grand Cru where Pinot Noir reigns supreme, Bérêche’s cuvée is sourced from less than a hectare of 40+-year-old vines at 280 metres’ elevation in the cool parcels of Brise Pot and Froide-Terre, bordering Mutigny in Grande Vallée de la Marne, where thin topsoils (at a maximum of 30cm) rest over dense Campanian chalk. Pinot Noir (75%) and Chardonnay (25%) fermented slowly in barrels and aged on lees in bottle for 78 months. The dosage was under 3 g/L. It’s a striking, penetrating Champagne whose depth of crystalline white fruits and soft spices is matched by its sinewy, chalky length and cut-glass precision. A flat-out stunner.

Champagne Suenen Cramant Blanc de Blancs Grand Cru Les Robarts (Disg. TBA)

Product Information: A symbol of the freedom of the Louis Roederer style, Collection continues the story of this champagne that encapsulates all of Roederer's savoir-faire and reflects its constant pursuit of quality. Collection is based on a multi-vintage blend of wines from selected vineyard plots in the heart of the Champagne terroirs with a focus on sustainable growing. The 245th blend is based on the 2020 vintage, blended with a perpetual reserve to build texture and complexity. There's a lovely golden yellow hue. Persistent lively bubbles. Bouquet of yellow fruits (nectarine) and ripe, concentrated citrus (lemon) complemented by sweet notes of petals, pollen, sugared almonds and wheat. The palate is velvety; unctuous, rich and juicy. The bubbles have an almost saline character to them and coat the palate with a broad and concentrated texture. The wine reveals an exceptional balance between structure and a crisp. powdery, saline chalky freshness. Smoky and slightly oaky notes linger on a deliciously well-honed finish. From equal parts of their estate vineyards la Rivière, la Montagne and la Côte. 41% Chardonnay, 35% Pinot Noir, 24% Meunier. The 245th blend is comprised of 55% of the 2020 harvest, 35% Perpetual reserve wine from 2012-2019) and 10% reserve wines aged in oak (2010, 2013, 2015, 2017, 2018, 2019). Acidity is softened with 22% malolactic fermentation and a low dosage of 7g per litre is added before bottling. Maker: Louis Roederer is a highly respected Champagne producer located in the historic city of Reims. The renowned Champagne house, founded in the late 1700s, is still owned and operated by the Roederer family. Their signature style consists of an equal blend of Chardonnay and Pinot Noir, with a touch of Pinot Meunier, which comprises approximately one-fifth of the blend. Louis Roederer's most famous wine is Cristal, a prestigious Champagne that has captured the hearts of wine enthusiasts worldwide. The house was founded in 1833 and aimed to capture foreign markets, particularly Russia. Roederer became the wine of choice for the Russian royal family, and Cristal was created for Tsar Alexander II. Louis Roederer acquired grand cru vineyards in Champagne in 1845, which was unusual for the time as most houses were buying grapes from growers. Today, the Roederer vineyards encompass around 240 hectares of land, with around 25% managed biodynamically. This commitment to sustainable farming practices is a testament to the house's dedication to producing high-quality wines that are both delicious and environmentally responsible. The Vineyard: The year 2020 followed a similar trajectory to that of 2019 with a mild and rainy winter followed by a dry summer with several heatwaves which, although less extreme than in 2019, still had an impact on the yield. Fortunately, the weather was rather dull and a bit wet in June which provided a welcome humid interlude between two dry spells. Despite early impressions of relentless heat and sunshine, the temperatures and sunshine levels over the 2020 harvest period were actually relatively normal. These continental conditions, but with "normal" annual averages, enabled the production of mature and well-balanced wines! The harvests took place between 22 August and 11 September 2020. Nose - Nectarine, Lemon, Sugared Almonds Bouquet of yellow fruits (nectarine) and ripe, concentrated citrus (lemon) complemented by sweet notes of petals, pollen, sugared almonds and wheat. Palate - Unctuous, Rich, Broad The palate is velvety; unctuous, rich and juicy. The bubbles have an almost saline character to them and coat the palate with a broad and concentrated texture. Finish - Crisp, Chalky, Slight Oak The wine reveals an exceptional balance between structure and a crisp, powdery, saline chalky freshness. Smoky and slightly oaky notes linger on a deliciously well-honed finish.
