Seacliff vodka is handcrafted from barley, grown in the nutrient rich, red earth soils of the fertile Riverina region. By having complete oversight of the inputs that go into the vodka, it is possible to create a delicately smooth vodka. The purity of the spirit is enhanced with the addition of spring water sourced from deep within the aquifers of the Southern Highlands. Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

First distilled in 1888, Bundaberg Rum is as Australian as it gets. Aged for a minimum of two years, this great rum made from 100% Queensland sugar cane shows evocative flavours of molasses and caramel.

Packed with botanicals it is juniper forward with the crispness of fresh organic white grapefruit peel balanced against Australian cinnamon myrtle and native pepper berries results in a modern versatile gin great for any occasion. Tasting Note A Juniper forward punchy Australian Dry style gin. The dry citrus hit of coriander seeds is accentuated by organic white grapefruit peel, providing fresh zesty qualities of citrus with subtle hints of bitter lemon. Floral top notes of lavender, rose and orris root, with earthy undertones from angelica root presenting on the nose. The Australian native botanicals of sweet strawberry gum and hot pepper berry linger on the finish which is elongated by the nuttiness of roasted native wattle seed.

Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Using the distillery's 120 years of rum-making expertise, the master craftsmen have searched our two-year old Bundaberg Rum reserves and selected a vat that was producing a rum with extra special characteristics. This premium rum was then doubled aged for a minimum of four years in our hand-crafted oak vats until it reached its peak.
