A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Crimson purple with a black intensity the nose is immediate Shiraz, black fruits and spice with gravelly graphite note. The palate is intense showing concentrated ripe blackberry and liquorice spice. The tannins are full and chocolate rich showing this wine has extended cellaring potential with a firm long persistent finish. Cellar for 20+ years.

Subtle threads of violets, cherry blossom and fresh juniper berries serve as highlights to an ample tapestry of black plums, cacao nib and ironstone. Sheer textures of crushed granite and black cherry skin are laced with porcelain tannin and quenching natural acidity.
