Fifth generation vigneron and winemaker, Nicolas Rossignol honed his skills in France and further afield; including stints in Châteauneuf-du-Pape, Bordeaux and South Africa. Eager to establish an estate of his very own, he purchased several parcels of land within the Côte de Beaune and set up Domaine Nicolas Rossignol in Volnay in 1997. Nicolas Rossignols 1er Cru Chevrets is denser and richer than many other Volnay wines, yet still displays the fine tannins and lightness of touch for which Volnay is renowned. Chevret may be a local word for creux or hollow and fittingly the vineyard is anchored on brown clay-limestone just below the premier cru of Cailleret.
