Our Honey Coconut Gin is steeped in fresh Castlemaine Honey straight from the beekeeper. Adding toasted coconut this traditional combination is complemented by a hint of fig and warm spices. Your palate will experience the layers of this gin beginning with the nutty flavour of toasted coconut, the warmth of the spices in between and ending with the smoothness of Australian honey.

Sweetness, citrus & spice, this unique gin screams of native myrtle, wildflowers & fennel, whilst offering a smooth palate derived from the addition of locally sourced cream prior to distillation. Its Old Tom, but not as you know him.

This gin has been crafted using both maseration and infusion methods to create a rose pink colour. The colour comes from grapefruit, pomegranate, blood orange, lemon and organic rose petals. We recommend a garnish that is not too overpowering such as cucumber. Conveniently, it is not necessary to squeeze lemon or lime as it is already packed with citrus. A fortuitous experiment with mastic gum led us to this surprising, enticing, fragrant gin. We use cold and pot distillation to harness pine notes of Greek mastic gum, paired with a bouquet of aromatic botanicals. This spritely gin leads with pine notes of Greek Mastic Gum and is beautifully aromatised by Juniper, Angelica Root, Rosemary, Bay Leaf and native Lemon Myrtle.
