Dr Onyx Tonic Speakeasy Gin
Speakeasy 500ml Gin Gin: Sir Winston Churchill, Ian Fleming, Charles Dickens, Queen Elizabeth II, F. Scott Fitzgerald – if you’re a gin fan, you’re in smart and sophisticated company. Its earliest origins date back to the Middle Ages, since then the drink has evolved from a herbal medicine to the classic Gin that remains so popular today. Gin derives its predominant flavour from juniper berries (which are full of antioxidants) with perfectly balanced botanicals – so we think this is just the tonic for those who need a rejuvenating drink at the end of a busy day. Serving Suggestions: To serve, fill two tumblers with ice, fill glasses evenly with Dr Onyx Just Gin, top with a quality tonic water (we recommend Fever Tree) and a squeeze of fresh lime, dropping the lime into the glass. The Natural Distilling Co Hemp Gin
Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.
Spring Bay Tasmanian Gin
Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

We macerate and boil the traditional botanicals while using the vapour-infused method for the Australian botanicals. This helps to balance a traditional gin base with the intensity of local botanical flavours. This unique Australian gin was recently recognised on the world stage, receiving a silver medal at the prestigious London Spirits Competition 2021.
