Our classic dry gin was specially distilled to display fragrant juniper aromas and hints of natural botanicals.

This was achieved in 2 categories - the London Dry and fevertree Gin & Tonic. Containing 10 botanicals and including locally grown lemon and cinnamon myrtle, Bundaberg's famous ground ginger and native finger limes, this traditional pot distilled gin will leave a lovely note of juniper and citrus on the palette.

A Unique, herbed and buttered Gin produced in small 200L batches in the urban Darling Distillery. Layers of bright citrus from fragrant orange, mandarin and native myrtle melt into the warmth of Tasmanian pepperberry and the heady spice of coriander and lemongrass. Earth undertones of fresh picked rosemary and green tea are rounded by lashings of rooftop honey and the textural finish of freshly churned butter.

Zesty Riverland blood oranges, cara cara navels and spicy botanicals are slow-steeped to extract every heart-warming drop of flavour. Riverland cara cara navels and blood oranges are harvested fresh for this distinctive gin. Balanced with juniper, pepper berry, coriander, cinnamon myrtle, camomile, and strawberry gum the botanicals are distributed across six botanical baskets and slow steeped in our sugarcane spirit for up to two days. Enticing aromas of orange, zest and slight musk awaken the senses. The palate begins with juicy citrus, followed by rounded spice, herbal intrigue, and zest. Delightful neat, exquisite with soda or however you please.

Crafted with the same quality and skill as the premium liquid, the classic is reduced in ABV and contains the classic London Dry base of Juniper and Coriander with Angelica Root, Cardamom and Lemon Myrtle. This simple but classic Gin sets a standard for small batch distilling at an entry level price.

Our Grenache Gin is the spirit of wine country, the perfect union of freshly pressed grape juice and gin. Grenache grapes grown in the McLaren Vale region are crushed and then added to our Triple Juniper Gin and allowed to steep.The result is a gin with a luminous red colour that develops into a bright hibiscus pink when diluted with tonic or soda.Flavour wise, Grenache is incredibly versatile. Its flavours bounce between bright raspberry and candied peel all the way through to dark plum and cinnamon, making it the perfect compliment to the spice and citrus of the Triple Juniper gin.This gin is perfect just on ice, with a splash of tonic or even squash. This is a gin best consumed right away.

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

Distilled in small batches in a custom built 230L Müller copper still, fresh ruby grapefruit, native aniseed myrtle, cubeb pepper and tonka beans are used to create this Gin.
