A delicious example of this gamay-based light red from southern Burgundy. Raspberry and plum aromas are direct and fruity, and the palate is light with a lingering, fragrant aftertaste.

It is the freshest of the Beaujolais Crus and the Parisian's favourite. Fresh and fruity, light and supple, it has a pleasant aroma of violets. The true wine-lovers drink it young when the Gamay still possesses its entire aroma.

Domaine Dubost is a fourth generation estate and has been managed by the hands of Jean-Paul Dubost since he took over from his father in 1993. They farm approximately 19 hectares, nine of which are from the village appellation. The rest of the land is split between Brouilly, Moulin à Vent, Morgon, and a little in Regnié. He has been transitioning to biodynamics since 2005 and ferments all of the wines with natural yeasts. The crus are made without sulphur or other additions. Jean-Paul Dubost Beaujolais-Lantignié Récolte is a red natural wine made from 100% Gamay grapes from the Beaujolais Village appellation called Beaujolais-Lantignié. Most of Daniel Bouland’s old bush vines are rooted in the Morgon climat of Corcelette, in hilly Haut-Morgon to the northwest of the appellation. Within this area, there are several lieux-dits that Bouland now bottles separately, and Bellevue is one of these. It’s a particularly stony (cailloux means stones) southeast-facing site, with plenty of schist running through the granitic, sandy base soil (much like in Côte du Py). The plethora of rock on the surface traps and radiates warmth, and, as a result, this is Bouland’s earliest-ripening site. The vines were planted in 1951 and 1987. This is made the same way as the Bellevue Sable wine—natural, whole-bunch ferment, concrete tank maturation and no fining—though the vines are on different rootstocks (420A rootstock in this case, specifically designed for terroirs that are very stony and have no topsoil). Mouton Cadet Select, is the result of the selection from the best parcels of highest terroirs across the Bordeaux region. Created in 1930, by Baron Philippe de Rothschild, Mouton Cadet has become a standard-setter for Bordeaux wines in France and rapidly overseas. The nose initially reveals black cherry, very ripe red fruit notes, hints of mocha and spice. From a supple and voluptuous attack on attractive fruit, the mid-palate displays powerful flavours with forward red fruit, leading into a long and spicy finish.
