Margaret River is a world renowned Chardonnay producing region and Pierro can rightfully stake a claim as to why. Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.

The wine expresses characters of lemon curd, glazed apricot Danish, ginger snap and orange blossom team with savoury underlying buckwheat, lanolin and toasty char complexity. These work in concert with a tactile calcareous interplay underpinning a silky pear-like texture. A lingering line of acidity provides the backbone but allows for the richness, weight and flavour, directing to a resounding and expansive finish. where body, flavour & palate weight co-exist with structure, texture and restrained acidity. Complex fruit characters of white nectarine, saffron, Pink Lady apple, chamomile flower, cashews and Leatherwood honey work in concert with a tactile interplay of chalk, silkiness and Beurre Bosc pear-like texture. Subtle acidity provides the backbone conveying the fruit and weight to a resounding finish.

A fine-boned Chardonnay that reflects vintage conditions and the character of a unique vineyard site purchased by Shaw + Smith in 2012. Inaugural vintage: 2014. Planted in 1999, the vineyard has east and west facing aspects and reaches 500 meters above sea level. The soil is brown loam over clay with some broken shale and stone on the ridges. The wine is100% hand-picked and whole-bunch pressed, then fermented and matured on lees in 500-litre French oak puncheons (30% new) for 9 months.

This Katherines Paddock Chardonnay combines the richness, drive and classicism of one clone with the fine-boned flinty structure and chalky notes of the other. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

Soaring and intense white peach fruits, interwoven nuttiness, crème brûlée, and a heightened leesy texture framed by bracing acidity.A square-jawed Bin A with undoubted opulence on the nose and also on the initial hit of flavour on the palate, but the gate comes down early doors and it leaves you with the notion that you have just been locked out of a very promising party. Unlike Bin 311, I think that this wine will segue smoothly into a ravishing beauty, given a few years, after all, it has an epic track record on its side. The fruit has flashes of white peach and Comice pear but the overriding theme is ‘white’, with blanche neige purity and a more than a little gusto under the bonnet. Chardonnay coming from the Bizot Vineyard in the Piccadilly Valley (Adelaide Hills), planted in 1996 at 500M altitude. Hand harvested (clones 76 and 95) on 1 March 2016 and whole bunch pressed (low yields of just 487.5L per tonne). Method Classic - first fermentation and ageing on full lees in old oak for 10 months, second fermentation and ageing in bottle on lees for 42 months. Disgorged September 2020.
