Four Pillars Olive Gin
Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

Infusions of fresh seedless Lebanese cucumbers and a combination of premium ingredients come together to achieve the unique flavour profile of our double distilled gin. The aroma of a 'cool as a cucumber' variant is a pronounced cucumber and melon, supported by juniper and spice. The palate exhibits the same flavours along with vanilla and sweet peppery notes. With a smooth mouthfeel and aftertaste softening the alcohol, it lends itself to enjoying straight 'on the rocks', or in the cocktail of your preference, ideally with a slice of cucumber and a sprig of mint leaves.
