Chalong Bay Rum Tropical Notes Series - Sweet Thai Basil is a natural, fine spirit 100% distilled from pure first press Thai sugarcane and distilled with traditional French methods. Following this, it is vapour infused with sweet Thai basil for a unique hit of flavour. Lighter than traditional rhum agricoles or cachacas, and more flavourful and fruity than molasses based white rums, it is particularly adapted to cocktails and mixology. The balance between lightness and its delicate sugarcane and floral aromas allows a wide utilisation in cocktail creation.

The wine expresses characters of lemon curd, glazed apricot Danish, ginger snap and orange blossom team with savoury underlying buckwheat, lanolin and toasty char complexity. These work in concert with a tactile calcareous interplay underpinning a silky pear-like texture. A lingering line of acidity provides the backbone but allows for the richness, weight and flavour, directing to a resounding and expansive finish. where body, flavour & palate weight co-exist with structure, texture and restrained acidity. Complex fruit characters of white nectarine, saffron, Pink Lady apple, chamomile flower, cashews and Leatherwood honey work in concert with a tactile interplay of chalk, silkiness and Beurre Bosc pear-like texture. Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.

Giant Steps plays it's part in the rapid accension of Australian Chardonnay back to the position it once held here. That being of the king of white varieties. This is a very stylish numbe from Phil Sexton and his team. Stonefruit, melon and butterscotch characters are supported by vanillin oak and the palate is long and textured with a clean crisp finish.

Deep Woods Estate Reserve Chardonnay gives aromas of fresh stone fruit and citrus blossom combining with warm straw, cedar spice and chipped oyster shell. The Palate displays pure and elegant stone fruit, lime zest and jasmine. A fine acid backbone combines with lees-derived texture to produce a wine of depth, and complexity with an underlying minerality.

Named after the sundial erected in the vineyard in 1842, Wehlener Sonnenuhr is the most famous vineyard in the Mosel. J.J Prüm owns five hectares of this precious vineyard. Extremely steep with optimal south-south west exposure, it yields fragrantly floral wines with ripe stone fruit aromas, underlying slately minerality and wonderful depth of flavour and structure. The Auslese wines are typically more reticent when young showing vivid crystalline citrus fruit and a backbone of tingling minerally acidity that will carry it gracefully for decades.

Tyrrell's Vat 1 Semillon is one of Australia's great white wines and has the capacity to age superbly in the bottle. This release continues the recent immaculate line up of Vat 1s that show classic citrus floral and honey aromas. The palate is dry, yet full-flavoured with lovely crisp acidity.
