Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

Inspired by juicy South West Australian summer fruits and warm days in Margaret River, this gin is light and thirst-quenching with a soft sweetness on the palate. Creamy mouthfeel packed full of rich dark fruits and sweet malt notes, which give way to sweet vanilla and cocoa interspersed with cinnamon spice. The whisky is matured in a combination of French and American oak ex-wine barrels plus finished in rare Morris Muscat barrels, previously used to create multi-award winning Muscat. COLOUR: Deep rich copper with reddish hues. NOSE: Rich with dates, figs and sweetness of dark molasses. PALATE: Well balanced and complex. Dried fig, sweet malt, vanilla and spices with creamy mouth feel. FINISH: Superb oak influence, lovely finish with satisfying after taste that lingers on the palate.

Forty Spotted Gin sets a new standard in local distilling, steeping traditional gin botanicals of juniper berry, coriander and lemon peel with a rare Tasmanian native spice to create a refined and elegant tipple quite unlike any other.

Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Tasmanian-made copper pot still gin from Pure Origins. Classic juniper berry, earthy and herbal notes give way to aromas of bergamot and lavender with subtle spice and a long finish. A must try for the gin devotee.
