Four Pillars Olive Gin

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

Ginversity Pink Gin

Inspired by juicy South West Australian summer fruits and warm days in Margaret River, this gin is light and thirst-quenching with a soft sweetness on the palate. Quandong is an essential element to the unique flavour profile, and brings a dryness to the palate. Pronounced botanicals include: Quandong, Fig, Apple, Berries, Citrus.

7K Distillery Aqua Vitae Tasmanian Raspberry Gin

These Willamette variety raspberries are grown in the deep south of Tasmanian, in the foot hills of our world heritage Mount Field National Park at the Westerway Raspberry Farm, owned and operated by the Clark family for over 25 years. These raspberries, originally from the north-west of USA are a sweet and juicy variety, great for jams, juicing and of course gin ;). With a very short shelf life and harvest season (4-6 weeks) you have to be quick to get your hands on the real thing, but if you miss out, don’t worry…. we have the next best thing :).

Karu Distillery Affinity Gin

A new approach to the classic spirit, Affinity gin. Juniper forward, semi-sweet citrus, floral tones, hints of Christmas spice, naturally sweet with a warm well rounded finish to create a harmonious sipping experience from start to finish.

Green Ant Gin

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Beachtree Distilling Co Organic Quokka Gin

Our signature gin. Inspired by the happiest animals on Earthquokkasthe friendly and well-known locals who have made Western Australias Rottnest Island famous. This gin is for berry lovers. Handcrafted in small batches at our distillery, weve used organically grown juniper, bilberries, and mountain pepper berries, giving it a fruity berry front and warm finish. Balanced with native Australian botanicals, including lemon myrtle, youre left with a sweet spiced flavour. Just like its namesake, Quokka Gin is bound to put a smile on your face!
