New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. A testament to Don Julios patience and determination for superior quality, Tequila Don Julio Añejo is the culmination of distinct rich flavours of agave balanced with the perfect amount of wood influence. Don Julio Añejo spends more than the minimum requirement of 1 year on oak, and is normally aged between 18 months and two years before it reaches its optimum age and taste profile. As with the rest of the Don Julio range the nose is fruity and floral, but with notes of vanilla and fresh agave, whilst the palate is slightly richer and more full bodied, yet still sweet and rich with citrus characteristics.

The Glen Moray 18 year old is a beautiful addition to the Glen Moray Heritage range. Only the very finest American oak barrels have been selected to emphasise the incredibly smooth character and taste of Glen Moray 18 year Single Malt. An intense whisky with a perfect structure, the soft flavours of sweet vanilla balanced with oak from the casks.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Ilegal mezcal is a beautifully balanced vintage mezcal from Tlacolula, Oaxaca Mexico. It is made by a fourth generation Mescalero and his family using 500 year old methods. Aged for four months in new American oak. Caramelised pear on the nose, agave, butterscotch and vanilla on the palate. A light fruit finish. Velvety smokiness throughout.

Winner of a Gold medal at the International Wine and Spirit Competition in 2011, this rum has a rich dark gold mahogany colour, wonderful intense nose of sweet raisins, sultanas, hints of tobacco and vanilla from the oak. On the palate strong with sweet honeyed fruit and spices, giving a lovely balanced and complex rum. The Forgotten Casks have not been chill filtered and is a blend of 6 to 11 year old rums: intense, raw and satisfying.

From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distillers Reserve single malt whisky. A no-age statement expression that captures the smoky, herbaceous characteristics of their whiskies. Both lightly-peated and heavily peated malts were used for this complex and deeply enjoyable whisky. A hint of smoke and a lovely long finish.
