Name With our love for the ocean and the stunning coastline on the cusp of McLaren Vale being a massive draw card to calling this fantastic little town home it made sense to link the name of our Reserve Shiraz to it. The Squid Ink name originated from the enticing first impression of the black, dye like depth of colour this wine resonates. Vineyard Our Squid Ink vineyard is the epitome of what defines one of the greatest vineyards in Australia where the famous Black Bay of Biscay Clay soil ensures fantastic fruit. Referred to by some local friends as ‘Mayfair’ the use of sustainable viticulture and having true respect for the value of our vineyards and the fruit they create. Winery In the winery the Squid Ink Shiraz fruit is treated with utmost respect, ensuring quality from start to finish. Fermented slowly for gentle extraction of colour, flavour and tannin, the wine is monitored closely. Following fermentation, the wine is then matured in the finest of predominantly new American oak with the 2021 seeing 60% new oak Hogheads for 18 months. Maturation 18 Months in American Oak, 60% new oak Colour Deep intense dark, almost black with a purple hue. Nose There’s a depth of concentration here only seen in some year and here I think it’s reminiscent of the 2010 or 2015 vintage. The complexity seeks several sniffs to grasp. Undeniably intriguing the earthy, savoury character lingers awaiting full expression from a little more time all while tightly embraced with layers of fruit. Palate Like the nose this wine pulls you in for more. The palate is timeless, with a firm but grounded texture the all-encompassing finish drives the wine across the mouth, leaving a full, expressive and delicious lasting experience. This wine is what we believe to be a true representative of Shiraz from our region. As an Estate owned, sustainably grown, single vineyard Shiraz, we have the ability to deliver a world-class wine consistently that is truly at the top of its game. This wine, like our lives, is wonderful in youth, but with patience and development of the wines fruit, along with the integration of the finest of oak this wine will also develop wonderfully. Bremerton Old Adam is a stunning example of Langhorne Creek Shiraz with dense and integrated fruit that exudes ripe plum and blackcurrant. Rebecca Willson is able to seperate each parcel of fruit that comes in off of the old vineyards and keeps them that way throughout fermentation and maturation in oak. This enables perfect barrel selection to create a wine of true distinction.

Sharktooth is an apt name of this wonderfully balanced wine. Razor sharp flavours of dark mulberry and blackcurrant are sliced by a freshness and vibrancy not often seen in full-bodied wines from McLaren Vale. A supreme example of modern Australian red winemaking is on display here and despite the unctuous concentration this wine dances across the palate and leaves you with a delightful length of flavour.

Chapel Hill are in the fortunate position to be the custodians of some of the most unique vineyard sites in McLaren Vale; showcased by The Gorge vineyard planted in 1993. With the gently undulating soils, which are derived from prized ancient rock formations, are further enhanced by the elevation as the site perfectly capitalises on the beneficial coastal influence. Always limited in number, theýGorge Block (formerly TheýChosen) Cabernet Sauvignon proudly showcases the sites wonderful ability to build a complex and concentrated red that will comfortably live in your cellar for the next 10 years if you can resist the alluring primary fruits on display today

The Nugan family is dedicated to showcasing the best vareitals from our finest growing regions. Dry warm sunny days with cool nights produced optimum fruit flavours. After picking, the Shiraz was crushed and softly bag pressed in traditional style to avoid the extraction of bitter tannins. The wine was fermentated in static fermenters, followed by further maturation with new and seasoned French and American oak prior to final blending.

Rich and opulent displaying aromas of deep plum and black cherry with hints of complex herb and delicate oak spice. The palate is full flavoured yet elegant with dark fruits and bright red berries, framed by firm, structural tannins and moreish acidity.

ColourVery attractive crimson black colour. DenseAromaVery lifted and perfumed, spicy, almost nutty fruit/ oak complexity. A touch of that peaty character which is so typical of the old vines in Block 9.PalateSoft, rich, flavoursome palate with lovely spice and pepper complexity lingering. Not sweet, more savoury and elegant in style. A great follow on from the 2010 Reserve Shiraz. This is an impressive example of old vine Blewitt Springs Shiraz.

Re-tasted on 07/06/2022 Magnificent colour displaying a pitch black core with a very deep black dark red hue. Pronounced black cherry, liquorice and black plum aromas are overlaid by scorched earth and smoked meats followed by spicy vanillin cedar and pepper notes. Tightly built rich black cherry and liquorice flavours dominate over inky earth, lightly scorched vanillin cedar, dried meats and blackpepper. Dry grippy finish with tightly grained tannins. Rich yet elegant and muscular in its feel. Good underlying power with a long black cherry, liquorice, smoky vanillin cedar, dried meats and earthy pepper aftertaste. Cellar 8-10 years. Alc. 14.5%
