The bouquet is layered with abundant aroma's of plum pudding, cigar box, blackberries & chocolate. It has an excellent length of flavour, velvety tannins and hints of smoky oak. 71% Shiraz and 29% Cabernet Sauvignon are separately fermented & matured in a combination of new French & American oak before final blending.

'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. Winemaking Hand-picked, hand-sorted, gently de-stemmed and berry sorted. Small, separate-batch ferments. Matured for 18 months in French oak and 50% new barrels. Only the 10 finest barrels selected for the final blend.

Geoff Merrill Parham Cabernet Sauvignon is a deep red coloured wine with purple hints. It was aged in brand new American oak hogsheads for 27 months. Its complex and powerful bouquet exudes aromas of roast beetroot, dark chocolate, black olive, blueberry, licorice and mint. The focussed yet balanced oak creates depth as it opens up in the glass. The palate is fleshy, full of tannins, structured with tight acidity, and displays flavours of dark blue fruits, black cherry and olive. Enjoy it with runny double brie, white castello, or pork belly.

His upland vineyard raises fruit of rare elegance without losing any of its perfumed intensity. Lithe tannins underlie a strap of lively blackberry, and perfect amounts of sinew, flesh and bright acidity guarantee a highly rewarding decade or two.
