Archie Rose Distilling Co Signature Dry Gin
Launched in March 2015, Archie Rose Distilling Co. is the first independent distillery and bar to open in the City of Sydney in over 160 years. Featuring Australian native botanicals including Lemon Myrtle, Blood Lime, River Mint and Dorrigo Pepperleaf, Archie Rose Signature Dry Gin is unique in the fact that all fourteen botanicals are individually distilled utilising one of three separate infusion points within a 300L copper pot still. While particularly labour intensive, the result is a perfectly balanced and wonderfully complex dry gin that fuses the old world with the new.

Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

With strawberry sweetness overlaying our Mountain Devil Classic Dry Gin, Nelly’s Blush is named after Nelly’s Glen, the start of the famous Six-Foot Track from the Blue Mountains to Jenolan Caves. The blushing colour denotes an infusion of strawberries that permeates this gin’s unique flavour profile. An aroma fanfare of strawberry blended with forest juniper notes leads on to a full flavour with tapering hints of liquorice and spices. The taste is complex but clean, resonant and lingering. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
