The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Forester Estate Sauvignon Blanc has clean aromas with underlying richness and varietal fruit characters of lychee and passionfruit. There's a subtle hint of blackcurrant along with lime and well integrated cedar oak. There is a herbaceous thread through the wine of pea shell and nettle along with underlying wood smoke. On the palate, full and textured with a rich creamy texture. There is lychee, lemon thyme, nettle, roasted red capsicum and passionfruit along with balanced cedar oak and wood smoke.

The Deep Woods Estate Hillside Semillon Sauvignon Blanc is a wine that can be enjoyed on release but will find further complexity over the next two to three years. The palate is clean and lively with tremendous depth of ripe stone-fruit and the aroma of nectarine, ripe citrus and white blossom.

Evans & Tate is arguable the most famous name in Western Australia wine, and now the Tate name has been re-born in the Franklin Tate Estates wines made by esteemed winemaker, Rory Clifton-Parks. Franklin Tate himself has sought out the finest vineyard sites in the Margaret River region to deliver superb, terroir driven, wines that showcase the tradition and longevity of the Tate name, but also a modern and innovative wine-making approach. The Chardonnay was one third fermented in fine French Oak barriques delivery a soft and creamy mouthfeel, yet still with varietal lift and fine acid balance.

Pale straw colour with nettles, limes, guava and tropical fruits combine to produce a complex nose, which is enhanced with some butterscotch lees characters. The palate is vibrant and fresh with a lovely concentration of tropical and subtle tropical flavours. The wine finishes with persistence and a lingering attractive textural flavour.

Tasting: This Chardonnay captures the very essence of what Margaret River Chardonnay is highly regarded for while simutaneaously including a modern palate. Great fruit expression with creamy stone fruit and fresh apple melded with bright citrus with a hint of tropical fruit. Rich mouthfeel and rounded palate siplaying hints of vanilla and butterscotch. Winemaking:Mostle machine harvested at night with some early morning handpicked fruit. Pressed into stainless steel tanks to settle, then racked to barrel while still hazy for wild ferment, allowing natural expression. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.

The palate exudes fleshy primary fruits, layered with nutmeal, lemon butter and brioche. A chalky, mineral texture and fresh citrus acidity continues the bounce.
