West Cape Howe Cape To Cape Chardonnay is a bright and clear wine flaunting a light lemon colour. The bouquet of this cool climate Chardonnay wine is beautifully aromatic with raw cashew nut characters and fragrances of fresh melon fruit. The palate is delicious and delicately flavoured with sweet tropical fruits and fresh honeydew melons. With an amazing palate weight, this Chardonnay is balanced by fresh acidity and flavoursome length. Made for immediate enjoyment, the wine pairs well with grilled fish, roast chicken, or vegetable terrines.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Once & Wells Chardonnay comes from grapes grown in both the warmer and cooler areas of the Margaret River region, mixing tropical and citrus characteristics to produce a distinctive and well-balanced wine. The Chardonnays nose is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, citrus, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. A touch of vanilla and spicy oak gives this Chardonnay a refined note.

Tasting: This Chardonnay captures the very essence of what Margaret River Chardonnay is highly regarded for while simutaneaously including a modern palate. Great fruit expression with creamy stone fruit and fresh apple melded with bright citrus with a hint of tropical fruit. Rich mouthfeel and rounded palate siplaying hints of vanilla and butterscotch. Winemaking:Mostle machine harvested at night with some early morning handpicked fruit. Pressed into stainless steel tanks to settle, then racked to barrel while still hazy for wild ferment, allowing natural expression. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.

Delicate and gentle notes of cooler climate fruits fill the nose; wet stones, chalk, fine citrus zest and orange blossom. The palate is lissom and has a mineral water like weight as citrus fruits mingle with toasted nut-meal and caramel. A fine and soft acidity retains levity and gives length and crispness to finish this Chardonnay by Marchand and Burch.

This exquisite Five Tales Sauvignon Blanc Semillon displays a pale straw colour with a bright green haze. The fragrant bouquet exudes lively aromas of tropical fruits, citrus and herbs, making way for a zesty and textured palate filled with intense citrus and tropical fruit flavours. These vibrant characters are balanced by crisp acidity, which leads this delightful white blend to a dry and refreshing finish. It has the potential to be cellared for 1 to 2 years from vintage.
