2006 Patrick of Coonawarra Home Block Cabernet Sauvignon. The grapes were grown at the Toccaciu Coonawarra estate, and the wine was matured for 26 months in French and American oak; while I am not a fan of ProCork, this is a very attractive wine, which has cruised through six, rising seven, years, the cassis and cedar flavours supported by very fine but persistent tannins.

The Vitulus 20 displays a dark ruby colour, with aromas of fresh red fruits such as juicy plum and cranberry, followed by subtle touches of forest floor. The palate presents fresh red cherry and juicy plum, complemented by hints of black pepper spice. Fine-grained tannins and subtle toasted oak create a layered wine with length and persistence.

This Shiraz delivers bold dark-fruits along with rich red-berry concentrates. Touches of subtle oak and pepper complete the palate, supported by a fine tannin structure.

The Vitulus 19 displays a dark ruby red colour, with hints of green peppercorn and forest floor on the nose. The palate provides fruit intensity, embodying flavours of blackcurrant and light blueberry alongside refreshing dried herbs. High sandy tannins and integrated vanillin oak characteristics provide a long and engaging finish.

Welcome to ED.02 of our Methode Eucalypt. After 2020s raging success, we are so excited to release the next vintage. This trial tests the hypothesis that vineyards amongst gum trees take on some aroma and flavour of Eucalyptus. Grapes were mechanically harvested in close proximity to Red Gums into 1T bins. The resultant wine showed significantly increased Eucalyptus aroma and flavour. This matured into a distinctly Australian Cabernet Sauvignon that expresses the environment and place in which it was grown. Balanced minty Or Eucalyptus aromas and flavours add to the Cabernet Sauvignon’s complexity, creating a uniquely Australian wine. It is a wine that expresses terroir in the true sense of the word.

'Black Label' Cabernet Sauvignon, which was first vintaged in 1954, has evolved markedly over the decades. It is arguably Australia's most recognised Cabernet Sauvignon, and has more than any other, helped define Coonawarra. The wine is matured in new and seasoned French oak for 12 to 18 months. A classic Coonawarra Cabernet with pristine dark berry/ cassis aromas, fine grained tannins and underlying savoury nuances, it develops into a rich, chocolaty wine with age. In a super vintage, this wine can look astonishingly like a 2nd or 3rd growth Bordeaux with its pure cassis aromas and cedary complexity. This single block Shiraz is crafted to the highest standards, utilising fruit from one of the Coonawarras most outstanding Shiraz vineyards. It epitomises the purity and elegance of cool climate Coonawarra.Fruit for this wine comes entirely from Tim Kidmans vineyard; specifically blocks 1 and 2 which our winemaking team have selected for special treatment due to the exceptional quality. These established vines are 50+ years old, and rest in classic terra rossa over limestone soils. They are naturally low yielding (approximately 3t/Ha), producing beautifully concentrated fruit that thrives from minimal, hand tended viticulture.After being hand harvested on the 26th of March, 2020 fruit was fermented in open static fermenters for 14 days. Malolactic fermentation was conducted in stainless steel before being barrelled down to premium French oak (25% new) for 18 months maturation. Bottled on 29th November, 2021 and allowed to settle and mature in bottle prior to release in April 2022.

A round rich palate with a good backbone of tight, but deliciously mouth-watering tannins. Generously flavoured but retaining elegance. Structured to age beautifully over the long term but round enough to be enjoyed while the primary fruits are fresh and vibrant.
