Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Australia's first spiced agricole rum. Designed to reflect the salty coastal rainforests of the North Coast of NSW, Spiced Bam Bam starts as a 3-4 year old barrel aged sipping rum. It is then infused with whole native & traditional botanicals including wattleseed, native ginger, citrus (mandarin & orange), cinnamon quills, Tahitian vanilla beans and sea salt. The result is a softly spiced rum that actually tastes like rum, perfect to sip on the rocks, mix with ginger or in any rum cocktail.

25 years chemical free, Estate grown Figs poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. A classic juniper gin shares the bunk cabin with pineapple and coconut - joined on their salacious paradise sojourn by lime, pandas, nutmeg, allspice and many more. Imagine a Pina Colada - coconut, pineapple, spice and citrus - but redelivered to you in a bed of juniper berries. Its a gin but with the imagination of a Pina colada.
