Mortlach Rare By Nature 21 Year OldSingle Malt Scotch Whisky 56.9% Abv, Speyside Called The Beast of Dufftown for its robust, muscular and rich character, little known Mortlach may be the best kept secret in Scotch. Tasting Notes APPEARANCE Deep gold with amber lights. Good beading. NOSE A mellow, rounded, nose with some prickle. The first impression is of rich, dried fruits, and beneath this fresh-baked buttered scones, perhaps spread with lime marmalade. Soon this becomes lightly savoury and meaty but retains a slight citric note. A drop of water modifies the latter and reduces the aroma. BODY Medium to full. PALATE At natural strength, mild for its strength and super-smooth in texture, while the wonderfully rich mouth-filling taste is immediately sweet overall with dried fruits, then intense and savoury with a surprising kick of chilli pepper as it goes down. Magnificently feral and delicious. Drying overall, with rich tannins. Similar with a dash of water, which raises a little more sweet, spiced fruit. FINISH Seemingly endless and deeply impressive, with the fruit and savoury notes in perfect agreement and a warming glow spreading across the palate. Finally leaving the palate dry, yet still wreathed in a glorious rich afterglow.

The 2022 edition is arguably the best yet, and this stellar cask-strength selection from Lagavulin is a definite highlight. This is an elemental Lagavulin crafted from virgin oak and their smokiest reserves, in which rich, peaty casks lead saltiness, spice and smoke on their eternal dance with deep sweetness. This year, the decision was made to make as smoky a Lagavulin as we could. A limited-edition 30-year-old single malt from Mortlach, Midnight malt was initially matured in a combination of refill American oak and European oak casks, before being finished in Bordeaux wine, Calvados and Guatemalan rum casks, then married and further matured in custom quarter casks. A release of just 350 limited bottles. NOSE A mellow nose with some initial prickle. This settles in time to reveal a savoury and faintly herbal top note, suggesting pork crackling sprinkled with dry sage. PALATE A richly winey, apple fruity and mouth-watering start delights the palate, backed by a long spicy intensity with a delicious black pepper note that really persists. FINISH Long, sweet and deep-flavoured, with a light peppery spiciness. With water, still sweet and softer, with the spicy heat joined by a suggestion of mint chocolate in the lingering aftertaste.

Talisker Rare By Nature 8 Year OldSingle Malt Scotch Whisky 57.9% Abv Skye The Singleton is renowned for the smoothness and balance of its Whiskies, which match the liveliness and vigour of the leaping salmon in the fast flowing rivers of Speyside in Scotland. The Singleton Dufftown is particularly known for its elegant grassy and fruity aromas and tastes. 'A big taste, the first-ever release of Talisker finished in pot-still Caribbean rum casks.' Tasting Notes APPEARANCE Dry white wine, with pale yellow lights. Good beading. NOSE Mellow and mild overall, with hardly any prickle. The first impression is of honeycomb; spun honey, but also a trace of beeswax. Beneath this is a faint floral note of dry grasses or wallflowers, with fresh orchard fruits on an earthy base. A little water softens the nose and adds pear drop boiled sweets, making all the aromas more evident. BODY Light to medium. PALATE At natural strength the texture is creamy-smooth, the taste intense and sweet overall, and both drying and slightly coating as that hint of beeswax re-appears. With water the effect is smoother and sweeter, the intensity reduced. FINISH Quite long and warming with white pepper, becoming chilli in the aftertaste. Lightly drying, it leaves the palate tingling. A drop of water starts to tame the chilli-spice.

KOVAL Distillerys organic, single barrel bourbon has the requisite mash bill of at least 51% corn, but instead of the usual rye or wheat supplement, they have included millet. Tucked away in a charred new American oak barrel to age, millet and corn learn to complement each other, neither taking the lead.

Pot still is an equipment used to distill spirits. It is a slower process and had to be done in batches in a single distillery. Green Spot is an Irish whiskey that mixed pot still whiskeys aged between 7 and 10 years, in order to find the perfect balance on the smell and taste. It opens up with notes of orchard fruits, sweet spices and toasty oak. Full body and a lasting pleasant finish with flavours of warm spices and barley.
