Newcastle Distilling Co Eagle One Novocastrian Rum
Newcastles first, barrel aged rum. Made from fermented treacle, this rich but smooth rum has delicate aromas and a pleasant taste. Even at cask strength of 62% ABV it is smooth and enjoyable. Aged for a period of 3 years in an American Oak ex bourbon/port barrel. Its namesake comes from the boat that our owner got to name as a kid, which belonged to his idol and mentor, his Grandfather.

La Maison Du Whisky Australia Rum Transcontinental Line Rum by La Maison Du Whisky
This rum, from independant bottler La Maison Du Whisky, has been distilled in Australia and aged here for 2 years. It was then transported to Europe and finished for an additional 2 more years. A part of their Transcontinental Line, this rum has been distilled in a pot still and matured in ex-french oak. A testament to Aussie distilling, this rum is a full bodied delight and has lots of beautiful local aromas.

6x 100ml Bottles.Old Fashioned:The Old Fashioned is said to have been first created at the Pendennis Club, a famous gentlemens club in Louisville, Kentucky in 1881 in honour of Colonel James E. Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest. Pinch the zest so the oils spray over the drink before dropping it into the glass.

6x 100ml Bottles.Manhattan:The first skyscrapers began to change the skyline of Manhattan Island in the 1880s, just as NYCs Manhattan Club claims they created the first Manhattan cocktail. And its making just as big an impact 140 or so years later, capturing all the glamour and excitement of New York City in a glass. The Manhattan has stayed true to its origins, mixing American Rye Whiskey, Sweet Vermouth, and traditional Angostura Bitters. During Prohibition (19201933) Canadian whisky was primarily used because it was more readily available. Just like its namesake, and the people who call it home, it has survived wars and prohibition, recessions and depressions. Serving Suggestions:To serve, pour Dr Onyx Manhattan into a mixing glass filled with ice, stir well, then strain into a chilled cocktail glass or in a short glass over ice. Newcastle Distilling Co Victor Hingston Single Malt
Newcastle’s first Single Malt Whisky. Individually numbered bottles, available in cask strength, 60% ABV and in 750ml bottles. Named after our distiller’s late grandfather, his best friend, idol and mentor, Victor Hingston Moy. Silver medal winner - 2019 Royal Australian Spirit Awards. This lightly peated Whiskey was produced in January 2017, using our on-site spring water and blend of Voyager craft malt and peat-smoked malt. Aged in a 100-litre port barrel, travelling from (and stored in) the New South Wales Snowy Mountains, ACT and to its final home in Newcastle. The movement and significant temperature variations during this time give this barrel a unique mix of environments, giving that perfect level of ageing within the barrel. Aroma: Subtle and smooth with hints of oak, smoke and toffee. Taste: Young peaches, fresh strawberries, with the toffee sweetness and a hit of smoke on the finish.

Each 500ml hand-crafted cocktail lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. As each Gift Box is manually waxed, no two boxes are the same, some minor organic imperfections may be visible.Margarita:There are many claims to the origin of the Margarita. Some say it evolved from the traditional Tequila Daisy (Margarita is Spanish for Daisy), similar to the Margarita with more focus on lemon and lime, than the balance of orange liquor in the Margarita.
