Tidal Lines is made from the classic Headlands Distilling Company gin recipe and then infused with native Illawarra Plums over a ~12 month time frame.This gin combines flavours of fresh juniper, rainforest lime, Illawarra Plum, cinnamon, angelica root, orris root and many others!

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

An award winner, this tripled distilled in a copper pot and macerated for 3 days using 14 Australian native botanicals (plus one non-native). The navy strength is a citral driven Gin that has been tricked up with lemon-scented gum, ginger and pepper berry.

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Tiny Bear Distillery is a micro-distillery located in the outer Melbourne suburb of Knoxfield. Opening their doors in June of 2018, they released three signature gins as well as two liqueurs. Tiny Bear Distillery has an innovative approach to creating its products, driven by the creator’s Chemistry and Biology teaching background. They've swapped out the usual gin botanicals for currants, cranberries, apricots and orange to make this fruity number. Finished off with a subtle drop of spice and decadent almond, this gin will make a heavenly summer gin and tonic garnished with a generous chunk of orange.

Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.
