Red Gum Single Malt utilises 100% malted barley, distilled in the Macedon Ranges and is one of the first distilleries to use native Australian Red Gum exclusively from start to finish in the maturation process as the only wood influence, creating a distinctly Australian flavour profile.

Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Upon tasting you are welcomed with fresh pear and golden apple. Rounding out with hints of wild spice, leather and mineral freshness to finish. The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Lovers of the traditional Italian classic cocktail the Negroni will find a new love in the form of this All Australian Negroni featuring our 69% Bathtub Cut Gin. Replacing the traditional Campari with Applewood Red Okar and featuring Maidenii Sweet Vermouth, this rich, earthy Australian take on the classic is a joy to behold. With less acidity than traditionally associated with a Negroni and despite its high alcohol content, it is easy drinking, soft, well rounded and richly botanical driven, with 50 individual botanicals between its 3 spirit ingredients. Serve on ice with a twist of orange peel, it will convert anyone to a Negroni lover!

Prohibition Liquor Co.’s Moonlight Gin is an homage to all things flourishing under the cover of darkness. Speakeasy 500ml Dry Martini Dry Martini: Ernest Hemingway described the Martini best “I’ve never tasted anything so cool and clean…They make me feel civilised”. It was James Bond’s drink of choice where the catchphrase “shaken, not stirred” was introduced in Diamonds Are Forever (1956), and then incorrectly referred to as “stirred, not shaken” in You Only Live Twice (1967), to Bond’s response “Perfect”. The Martini rose to prominence during the 1950s and 60s when the ‘three-martini lunch’ was widespread. Whilst the stance on workplace drinking might have changed, our affection for the Martini hasn’t. An excellent tonic for those wanting to step back to a more sophisticated time.
