Old Kempton Distillery 'The Old Stables Whisky' Single Malt Whisky

The Old Stables has been created to be the perfect introduction to the Old Kempton whisky range. Bottled at a modest 40.5% alc/vol, this small batch release is wonderful for sharing a dram with friends over dinner. Colour Golden brown. Nose Soft vanilla, malt & dried fruit on the nose. On the second inspection, cereals & nutty flavours. Palate Beautiful texture, good integration of the alcohol. The balance of the whisky is lovely with fruit and intense spices on the finish. Good length, very persistent on the tongue.

Hartshorn Gin Sheep Whey

The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

The Gospel Gospel Solera Australian Rye

Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. Four Pillars Olive Gin

Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

Four Pillars Spice Trade Gin

Spice Trade Gin is quite literally a spice bazaar in a bottle. It is vibrant, aromatic and, if ‘colourful’ was a sense, then it would be that too. Firstly, it is unmistakably gin. There is a huge weight of juniper which we needed because the power of the botanicals needed a solid canvas. Then you get powerful aromas of finger lime, chilli, cardamom and turmeric. The palate is huge. The weight is built from macadamia and cashews along with sarsaparilla and cassia which hold the spices together. The warming spices of teppal, long pepper, fresh red chilli and black cardamom blend with lemon and anise myrtle to add to the power and depth of the gin. This gin is a festival and a celebration. The Gospel Straight Rye Whiskey

The Gospel Straight Rye Whiskey is made from 100% Australian Mallee Rye, grown in one of the driest regions of the driest country in the world. We use 100% rye mash - double distilled and then aged for at least two years in new American Oak barrels in Melbourne, Australia. Full flavoured Rye, fresh baked rye bread on the nose, caramel and spice on the pallete.
