Our interpretation of a traditional British Navy Strength gin, KI NO BI SEI is made using the same production method with 11 botanicals distilled in 6 distinct flavour categories: the final blend has been recalibrated to bring out the botanicals at maximum intensity. High proof allows the distinct taste of KI NO BIs flavour profile to prevail. Its punchy at first on the palate, still has the cleanness and harmony. All essences of flavours are enhanced in good balance.

”Dark green” for imaging that green koyamaki’s selling, and GIN’s flavor for base that mixed with juniper berry, it makes more flavorful scented GIN. Koyamaki and juniper berry’s flavor which both of them contain a lot of “α pinene” ingredients, so they are very compatible with each other. “expanse” and “abundanc e “of the KOZUE’s flavor are born from here. Added Mandarin orange peel made in Wakayama, it feels soft and fresh scent were mixed when tasted by drink, and makes good tast e. Further more, the flavor of Sansho (Wakayama’s Japanese pepper) to enhance the feeling of aftertaste, we accomplished the flavor that will makes you want to drink more.

The little balls pop in your mouth when you bite them releasing a 40% alcohol burst of finger lime gin which is different to the gin they are suspended in. A medley of Hawkesbury grown citrus Kaffir Lime, Tahitian lime leaves and Navelina orange makes this a gin experience like no other. Complex in its craft, but incredibly simple to enjoy as the perfect G&T. The bottle is mesmerising to look at and is often referred to as like a gin snowdome.

A 10 year journey in the making... This gin is the distillers masterpiece featuring suspended finger lime caviar from the distillers 80 acre farm at Kurrajong Heights. These little balls of limey goodness pop in your mouth when you bite them releasing an aromatic burst of pure citrussy gin an experience like no other! Also known as "Snow Dome Gin" it makes the perfect gift for those who are hard to buy for and has a spectacular presence with the suspended finger lime caviar swirling and magically suspending in the bottle. A super smooth gin featuring a medly of Hawkesbury grown citrus. Tahitian lime leaf and Kaffir lime leaf also grown on the distillers farm are balanced with aromatic Navelina oranges & juniper from the highest mountains of Bulgaria. Finger lime gin is hand made in micro batches of just 43L using spring water from our farm. Each bottle takes over 1 year to make and mature from growing the fruit to distilling the gin and infusing the finger lime caviar so that when you bite those little pops you get a burst of 40% alcohol gin which is different to the gin they are suspended in. You can enjoy the rich taste of cedar and cypress harvested in the area where Kumano Kodo is a World Heritage Site. Mainly uses “Kishu sugi (cypress)” and Kishu Kumano hinoki(cedar)” which are famous as “Kishu wood”, and uses juniper berry as the base of the aroma of gin. The fragrances of the three materials contain a lot of ingredients called “”alpha pinene”” and deepen the fragrance of each other. At first, the scent of Japanese cedar rises, and when you put it in your mouth, the calm and thick scent and flavor of Japanese cypress spreads a little later. Kavalan Gin
Already a star in the world whisky scene after just ten years, Kavalan Distillery has now released the very first Taiwan-inspired gin. Employing botanicals sourced from Yilan, just outside Taipei including kumquat peel, dried star fruit and red-flesh guava botanical extracts, the mix also includes juniper, aniseed and coriander. Produced using a malted barley base spirit, Master Distiller, Ian Chang adds “Above all, I wanted this Gin to be refreshing and elegant. Imagine taking a dip in a crystal pool on an intense summer's day. That's what I had in mind for the experience of drinking Kavalan Gin.” The final result is double charcoal-filtered and triple distilled. Tasting note: Clear. Unusual floral / fruity aromas hint at elderflower, feijoa or tangerine peel? A light to medium bodied gin with atypical flavours suggesting orange sherbet, elderflower and frail juniper. Finish is soft, rounded, brisk and slightly soapy. Rose petal, subtle citrus peel and elderflower-like notes through the aftertaste.
