The kabutogama still is an old method of distillation that was popular until the late 19th century and the owner Mr. Tatsumi is dedicated to reviving this method through his patience and expertise. Tatsumi, the owner of Tatsumi Distillery, has created an exceptional craft gin using only one botanical, Juniper berry sourced from northern Macedonia, known for its high quality. The juniper berries found in North Macedonia are distinct due to the unique natural terroir, which results in a high concentration of essential oils. These berries grow wild on high mountain slopes that are unpolluted and pristine, making them the ideal choice for crafting the world's finest gin. Tatsumi Distillery Gin is distilled from two different Shochu bases, Sake Lees Shochu & Chicory Shochu, using the traditional Kabutogama still. To ensure consistency, Tatsumi Distillery Gin is handmade in small batches of less than 500 bottles. Tatsumi Distillery Gin has a woody taste similar to that of coniferous trees, along with a subtle hint of citrus and a fruity aroma reminiscent of Ginjo-Sake. The process is inspired by the high tech extraction and distillation techniques used for making the best perfumes in the world and has never before been used in spirits. The 20 high quality botanicals that go into 44n include Cade (a species of juniper typical to the Mediterranean), Mimosa, Rose Centifolia, Immortelle and Verbena which meld together with our unique process. Top notes The first thing that hits your nose is fresh zingy lemon peel and grapfruit. The aroma of a marine breeze, samphire, is punctuated by touches of mimosa. Cade adds woody, piney facets. Body notes A blooming floral body with hints of Grasse's rose centifolia and jasmine. Jammy facets of bitter orange are countered by the herbaceous punch of angelica. Hints of warm pepper here and there round out the middle notes. Base notes The tangy warm spicy notes of alexanders, underlying all along, allude to the undergrowth where the cade grows freely. No. 209 Sauvignon Blanc Barrel Reserve Gin Batch #4 has a floral nose with hints of toasted grain and subtle spice over undertones of juniper and citrus. The first sip is alluringly sweet and citrusy, with a pleasant tang from wine barrel aging. Mid-palate shows a burst of floral tones, lavender, rose and chamomile with hints of juniper. The finish is long and round with cardamom, chocolate and cassia notes.
