Balfour Winery is based on the Hush Heath Estate in Kent, the warmest and driest country in England. The estate comprises 400 acres of vineyards, orchards, and woodlands. The vineyards were first planted in 2002 and by 2007, their first wine - the 2004 Balfour Brut Rose - had won a gold medal at the Wine Challenge. The 1503 Classic Cuvee is named after the year Hush Heath Manor was built. It is a blend of 55% Chardonnay, 34% Pinot Noir, and 11% Pinot Meunier. Pale gold in appearance, with aromas of fresh citrus, red apples, and subtle toasted brioche characters. Beautifully balanced on the palate with lemony acidity, crisp apple and subtle notes of thyme, finishing with a classic, traditional method toastiness. Beefeater's Pink Gin is a vibrant new strawberry gin from Beefeater London. Sweet and refreshing.

First created in 2013, Dodd's is a unique marriage of two separate distillations; the bulk of the botanicals are distilled in a relatively small, 140-litre copper alembic still called 'Christina'. Then, the distillation of the more delicate botanicals (such as raspberry leaf) takes place in a small, bespoke 'Cold Vacuum' still, christened 'Little Albion'. The two spirits are blended for several weeks before bottling. The team's attention to detail extends to exquisite individually numbered, letterpress labels, which are printed on an old Heidelberg press and attached to each bottle by hand. Maybe the finest Dry Martini ingredient available in Australia today.

These whiskies are adorned with cultish graphic novel-style labels. The Oxford Artisan Distillery has a penchant for using intriguing grains to make its marvellous whiskies. This is a single grain whisky made with ancient heritage grains, specifically corn, rye, wheat, and malted barley. What's more exciting is that the whisky is from the very first cask that the distillery filled and is a release of only 189 bottles. It was also given a finishing period in a Sauternes cask, imparting a helping of bright, fruity sweetness.
