Shows more traditional Australian brooding dark fruit character of blackcurrant, stewed cherry and satsuma plum on a backing of liquorice, spice and smoky, bacony oak. Shaped by this altitude and southerly latitudes the cooler climate is ideal for growing grapes destined to become wines of distinction, wines with impressive structure, minerality and natural acidity. North facing single vineyard sites maximize autumn sunlight for later ripening varietals, South facing sites favor aromatic whites and sparkling wines. Significant diurnal temperature variation during grape ripening is a distinguishing feature of this vineyard. Longer sunlight hours and temperate daytime temperatures contribute to intense fruit flavours while the sudden fall in evening temperature preserves natural acidity and structure.

Rich and flavoursome the 2018 Cutlass Single Vineyard Shiraz shows thick cuts of red berry and juicy dark plum with some whole bunch derived perfume and spice.The palate is long and persistent with complex fruit flavours overlaid with fresh toasty French Oak.

100% whole bunch pressed and wild fermented in one year old French oak for 10 months. A dark plum colour which immediately reflects the origin of cool climate Adelaide Hills. The bouquet is extremely complex with hints of spice, aniseed, wood smoke and flashes of star anise. The palate is rich and lush from start to finish and has excellent breadth and length. The mid palate explodes withluscious blood plum fruits in the mix, chalky tannins & a neat touch of fresh raspberry acidity to finish. The balance impeccable.
