A mellow and sweet Australian Single Malt Whisky, matured in ex-Kentucky Bourbon casks filled in Manly Spirits' first year of distilling. The Bourbon Cask expression is part of Manly Spirits Co. Distillery's first release series 'Element Series', matured in their Northern Beaches distillery for 4 years. After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.

Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. Fizzy sherbet overtones lend this classic bourbon cask dram a lovely zing and brightness. A couple of drops of water serve to sweeten the sensation and open some subtle floral tones. Finish Long and clean with a lingering semi-sweet sherbet fizz with hints of almond providing a very pleasant semi- dry conclusion.

Islay, Scotland melds with Melbourne, Australia. And old worlds and new worlds collide.We started with our signature red-wine-barrel-aged single malt, its flavour fruit-forward and juicy. Then we swerved from the expected. Heavily-peated whisky barrels direct from Islays finest distilleries would give our whisky a peat character never yet tasted in Starward.In each sip of Unexpeated, ripe red berries meet a coastal peat smoke. Sweet peat lingers in the aroma and lengthy finish.Pair with smoky dishes like trout or grilled eggplant for a flavour sensation. Matured in French Oak casks previously used to age tawny fortified wine. Deep amber in colour with a sweet pleasant nose with dark chocolate, berries, raisins and toffee. A smooth, rich mouthfeel, the finish is long and warming, with sweet tawny notes

Growing up as market gardeners, there was always a passion for the best quality produce. This same passion has now developed into a fine single malt whisky. Hand crafted, barrel aged and matured. Made with the finest grade Australian barley. Packed and protected the same way we packed our prized produce. Sweet and fruity on the nose, a subtle woodiness and delicate malt finish. A modern yet balanced whisky suitable for all occassions.

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Perfect for celebrating births, weddings, wakes and anything in between.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Matured in French Oak casks previously used to age apera fortified wine. Rich copper in colour with engaging fragrant aromas & a pleasant mouth feel with subtle apera dried fruit flavours, malt, spice sultanas and caramel.
