A Rosé with the structure of a prestige Cuvée, Charles Heidsidck Rosé Reserve has a subtle, yet complex aromas of strawberry jam mixed with ripe peaches on the nose. It is delicate at first on the palate but the raspberry and blackberry slowly became apparent. They are well-balanced with the right amount of acidity. Meaning beauty in japanese, Bi is one of Houraisen's flagship sake's. It is a very elegant style of the highest grade of sake, Junmai Daiginjo. Tank matured for 10 months at 10 degrees in order to have a rounder and more mellow character, it has a nose that indicates sweet fruits with the palate showing good balance between the gentle acidity and the sweet fruit flavours.

Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the frigid winters and using specific filtration types for each whiskey they make. The Sour Mash is their original recipe whiskey.

Today Yamahai - Jikomi is quite a rare method of fermentation. This long slow processs not only gives the sake a rich concentrated flavour but also very high acid and dryness. It has a slight golden colour, with aromas of spice, tumeric and curd. Rich and complex on the palate, with a long crisp finish.

G.H.MUMM Millésimé 2006 is a luminous and bright golden yellow in colour with fine, lingering bubbles.The nose reveals a superbly complex wine: notes of apple and pear, with yellow fruit such as apricot and mirabelleplum. It then develops aromas of dried fruit and nuts with hints of pastry. After a strong attack, the wine developsgradually. It then reveals the increasingly perceptible presence of Pinot Noir, giving an unctuousness to the structure before unfolding into a long, precise finish.
