Devil's Lair The Hidden Cave collection was created to showcase the daring and innovative approach to Margaret River winemaking. Oliver Crawford hits the mark beautifully with this Chardonnay that is bursting with Granny Smith apple aromas. In the mouth the wine is a cascading behemoth of white peach and rich nougat.

Made from vines planted in 2002, the fruit was harvested at moderate ripeness, based on flavour and retention of natural acidity, then barrel fermented in French oak and aged for a further ten months. In the glass: Green straw, yellow highlights.On the nose: Bold and striking lime and nectarine freshness with subtle, complexing ozone and oyster shell notes.On the palate: Terrific poise and balance with the beautiful aromas carrying precisely through to the palate, driven by lime-like acidity and perfectly judged quality oak.

The Maker Chardonnay shows lifted aromas of grapefruit, stonefruit and hints of oak spice. With delicious flavours of ripe white peach, fresh citrus and an elegant finish. The Brookland Valley Chardonnay is full of intense fruit aromas and a balanced palate. the bouquet displays lifted peach and nectarine notes combined with cashew, nougat and brioche. the palate is generous with citrus and stone fruit dominance. these flavours are supported by vanilla, spice and toasty oak.

McHenry Hohnen is the quintessential family owned business with Murry McHenry and David Hohnen being brothers-in-law and the winemaking now being handled by David's son-in-law Ryan Walsh. With decades of Western Australian winemaking and selling history behind David and Murray the wines being produced are of utmost purity and subtlety. The Burnside Chardonnay is a relative recent addition to the range and is a funky, wild little number with attractive stone fruit characters that are balanced by a beautiful natural acidity.
