Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Ink Gin is a beautifully delicate modern Australian gin. Lemon myrtle & orange citrus, soft floral & fresh pine notes are followed by a spicy pepperberry finish. Pot distilled with a blend of 12 Australian native, traditional & exotic botanicals before being infused with an exotic blue flower which imparts smoothness and all natural indigo colour. The flower is pH sensitive, mixing from indigo to blush pink with the addition of tonic, lemon or lime.

The Gospel Straight Rye Whiskey is made from 100% Australian Mallee Rye, grown in one of the driest regions of the driest country in the world. We use 100% rye mash - double distilled and then aged for at least two years in new American Oak barrels in Melbourne, Australia. Full flavoured Rye, fresh baked rye bread on the nose, caramel and spice on the pallete.

Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.
