The richly layered Glenfiddich 15 Year Old single malt Scotch whisky is innovatively matured in three types of oak cask: sherry, bourbon and new oak, before being married in a handcrafted Solera vat that is never emptied, but is always kept at least half full creating a deliciously harmonious and intense whisky.

Despite being the largest distillery on Islay (in terms of production anyway), nearly all of Caol Ila's output ends up in blends, so much so that until 2002 when the 12-year-old was released, independent bottlings were the only recourse for malt hunters. A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Ardbeg 10 Year Old Single Malt is typical Islay (eye-la). Light gold colour with exceptional balance and depth on the nose. The aroma is a beguiling mix of toffee and chocolate sweetness, cinnamon spice, Fresh citrus and floral notes of white wine are evident, as are melon, pear drops and a gentle creaminess. There is also fresh phenolics of seaspray and smoked fish. Hickory and coffee emerge on the finish.

Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then finished in casks that previously held Caribbean rum. To create the ideal finish Malt Master David Stewart, filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit,with a warm, lingering finish.
