Winner of a Gold medal at the International Wine and Spirit Competition in 2011, this rum has a rich dark gold mahogany colour, wonderful intense nose of sweet raisins, sultanas, hints of tobacco and vanilla from the oak. On the palate strong with sweet honeyed fruit and spices, giving a lovely balanced and complex rum. The Forgotten Casks have not been chill filtered and is a blend of 6 to 11 year old rums: intense, raw and satisfying.

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. The word heritage has various associations: inheritance, patrimony and a family secret kept under lock and key by the Caetano family. This germana cachaça is aged for eigth years in French Oak barrels and then for two more years in Balsam barrels to break the woody flavour and aroma an lighten the darker color result of the Frech Oak barrel aging.

Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

Dalmore, located on the northern shores of the Firth of Cromarty, deep in the Scottish Highlands has been making single malt whiskies since 1839 and the bottles still bear the stag crest of the Clan Mackenzie. Their Cigar Malt Reserve is a wonderful blend of three different oak types of 10-15 year old whiskies. White American oak, 30 year old Matusalem Olorosso Sherry casks and Premier Cru Cabernet Sauvignon wine barriques. The final blend has an enveloping aroma and flavour of the finest hand-made cigars; rich and smoky and extremely long lasting.
