Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. Bushmills Single Malt Whiskey 16 year old is aged for 16 years in a combination of Oloroso Sherry and Bourbon-seasoned casks, then matured for several months in port wine barrels. The unique maturation process gives this single malt its distinct notes of juicy fruits, nuts and spice, as well as a hint of ruby redness. Its best enjoyed neat or over ice.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

The Macallan 12 Year Old Double Cask is the perfect balance of 100% sherry seasoned American and European oak, a marriage of 2 wood types. Smooth, sweet and balanced. The defining style is American oak - citrus and light oak balanced by the expected Macallan character of rich fruit and wood spice.

This is a new artisan craft Gin from a historical 1865 distillery Chiyomusubi in the prefecture of Tottori in Japan. Hand crafted and blended with quality and local, genuine Japanese ingredients. Specific botanicals such as (yuzu citrus, Hassaku citrus, ginger and Lindera) are used to the base spirit shocho distilling technology cultivated over many years. This is in addition to the typical botanicals of gin (juniper berries, coriander, angelica, lemon). Ilegal mezcal is a beautifully balanced vintage mezcal from Tlacolula, Oaxaca Mexico. It is made by a fourth generation Mescalero and his family using 500 year old methods. Aged for four months in new American oak. Caramelised pear on the nose, agave, butterscotch and vanilla on the palate. A light fruit finish. Velvety smokiness throughout.
