Today Yamahai - Jikomi is quite a rare method of fermentation. This long slow processs not only gives the sake a rich concentrated flavour but also very high acid and dryness. Prosper Delord was a travelling distiller who upon discovering Armagnac fell in love with the spirit and decided to start Maison Delord in 1893. Today Jerome and Sylvain Delord, Propers great grandchildren continue the tradition with the same passion, knowledge and love that has been handed down through the generations. This armagnac is aged for a minimum of 10 years. Aromas of caramel with flavours of spice and oak, mellowing out into plums and raisin sweetness and an aromatic finish.

Dewazakura and the local agricultural bureau developed regional sake rice called Dewa Sansan which is used in this sake. A very soft and deep flavoured style with good zingy acidity, and a clean and fresh finish.

Ilegal mezcal is a beautifully balanced vintage mezcal from Tlacolula, Oaxaca Mexico. It is made by a fourth generation Mescalero and his family using 500 year old methods. Ilegal joven mezcal is a perfect balance of espadin agave and light smoke. Deep agave aromas. Hints of baked apple and white pepper. Lingering heat and sweet agave throughout.

Dewars 18 Year Old Scotch Whisky is carefully prepared by putting the whisky back into the cask to mature a second time after blending (double-aging). This method allows all of the older and characterful whiskies to mingle before bottling with resulting flavours of nut and marzipan, to name a few.
