Our Peated Single Malt attracts both peated whisky lovers as well as those previously averse to the heavier smokier elements of single malts. Tasting Notes: Nose: A subdued peat aroma combined with natural leather and overtones of kumquat and fruit mince tart. Sweet, but not overly so. Our Double Wood expression is a reflection of the impact of rich, soft oak on the pure Bakery Hill unpeated new make spirit. Our Classic spirit is initially matured for up to 7 years in American Oak Ex-Bourbon barrels from Jack Daniels, before being transferred to a virgin French Oak ex-wine barrel, shaved back to bare wood, and then given a light toast to highlight the oak itself – rather than any of the previous contents of the barrel. Tasting Notes: Nose: The nose opens with the slightest hint of apricot, coconut and plum, going on to reveal an intermingling of golden syrup and plum pudding warmed by the spicy hint of cloves Palate: Subdued, mouth filling with orange marmalade overtones with the characteristic rich nougat sweetness and well balanced oak Finish: Rounded, well finished and lingering to the very end

Some say it evolved from the traditional Tequila Daisy (Margarita is Spanish for Daisy), similar to the Margarita with more focus on lemon and lime, than the balance of orange liquor in the Margarita. Others say it was created in a Tijuana bar for the Ziegfeld dancer Majorie King. Another popular story is that it was created by socialite Margarita Sames for guests at her Acapulco holiday home. Regardless of how it originated, the blend of Tequila, Cointreau Liqueur, and lime is one of the most popular cocktails of choice.Serving Suggestions:To serve, line the rim of a tumbler with fresh lime and dip the rim in salt. And its making just as big an impact 140 or so years later, capturing all the glamour and excitement of New York City in a glass. The Manhattan has stayed true to its origins, mixing American Rye Whiskey, Sweet Vermouth, and traditional Angostura Bitters. During Prohibition (19201933) Canadian whisky was primarily used because it was more readily available. Just like its namesake, and the people who call it home, it has survived wars and prohibition, recessions and depressions. Serving Suggestions:To serve, pour Dr Onyx Manhattan into a mixing glass filled with ice, stir well, then strain into a chilled cocktail glass or in a short glass over ice.
