A superb 15 year old from the Highland Park distillery. The nose is a profusion of ripe floral notes and fresh blossom with a delectable fruit salad. Notes of honeyed exotic fruits with a little botrytis. The palate is creamy and full with fruit conserves and espresso. A creaminess with cinnamon and allspice. Notes of toffee with thick black forest honey with a touch more citrus. The finish is long and well sugared with a herbal edge.

Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. This whisky displays rich luxurious amber colour, sweet honey and spice on the nose. Complex sherry, port and vanilla on the palate. Clement LElixir comes from the blend of rums aged 6 years. A vintage that has aromatic characteristics. An abundance of delicately woody notes and the playfulness of spicy flavours sign the general aromatic profile of this vintage. The scents of cinnamon coexist with those of dry dates. Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.

To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distillers Reserve single malt whisky. A no-age statement expression that captures the smoky, herbaceous characteristics of their whiskies. Both lightly-peated and heavily peated malts were used for this complex and deeply enjoyable whisky. A hint of smoke and a lovely long finish.

Meaning beauty in japanese, Bi is one of Houraisen's flagship sake's. It is a very elegant style of the highest grade of sake, Junmai Daiginjo. Tank matured for 10 months at 10 degrees in order to have a rounder and more mellow character, it has a nose that indicates sweet fruits with the palate showing good balance between the gentle acidity and the sweet fruit flavours.
