Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then finished in casks that previously held Caribbean rum. To create the ideal finish Malt Master David Stewart, filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit,with a warm, lingering finish. From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distillers Reserve single malt whisky. A no-age statement expression that captures the smoky, herbaceous characteristics of their whiskies. Both lightly-peated and heavily peated malts were used for this complex and deeply enjoyable whisky. A hint of smoke and a lovely long finish.

To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

Since 1896 all Mortlach whiskies have been 2.81 distilled. Unlike with any other whisky, our spirit criss-crosses between six copper stills of completely different silhouettes 0.81 more times than is Scotch tradition. It is an exact science graced with a touch of magic from The Wee Witchie.The Wee Witchie is the smallest of our six stills. Since it was first forged more than 120 years ago we have fastidiously ensured every dent and detail remains unchanged because it is within this copper chamber that the specific richness of taste which has earned Mortlach the reputation as The Beast of Dufftown is created. We dedicate this 12 year old Single Malt Scotch Whisky to the still that bears the beast. It has been double cask matured in both European and American oak to enhance the distinctively rich and robust character that makes Mortlach whiskies legendary.

Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

Matured in French Oak casks previously used to age apera fortified wine. Rich copper in colour with engaging fragrant aromas & a pleasant mouth feel with subtle apera dried fruit flavours, malt, spice sultanas and caramel.

Matured in French Oak casks previously used to age tawny fortified wine. Deep amber in colour with a sweet pleasant nose with dark chocolate, berries, raisins and toffee. A smooth, rich mouthfeel, the finish is long and warming, with sweet tawny notes

Matured in port puncheons, Limeburners Whisky is aged for up to 8 years. The resulting single malt is all spice and fruit with aromas of port and vanilla on the nose, barley, honey, raisins and caramel on the palate and finishes smooth.

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.
