A grape vodka, produced from the low wines grown in our East Coast IronHouse vineyards, this traditionally distilled vodka is not for the light hearted. Although exceptionally clean with a dangerously moreish hint of vanilla and caramels, this vodka when taken straight from the freezer is the perfect accompaniment to any seafood, especially caviar or oysters. Delicate, yet exceptionally clean with a crisp creamy finish. In keeping with our environmentally sound ethos, the low wines from our vines produce the clean spirit, thereby minimising wastage and confirming the source quality.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. This secret recipe is combined through our copper stills in the heart of Tasmania to create a delicious liqueur with hints of honey, spice and, of course, lavender. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Lets raise this bounteous bottle to Ginger Mick. Legendary larrikin and official bluey of Victorian Little Lon - written into Australian poetry folklore by C.J Dennis in the early 20th Century. Would he have approved of this lordly libation? This nectar, with its bright bouquet of orange and grapefruit, its notes of ginger and juniper emerging tellingly on the finish. A warming spice-driven gin with a unique balance of savoury Australian native botanicals and aromatic winter spices. Sweet orange peel, native strawberry gum and macerated lilly pilli offers a gentle yet full bodied sweet backbone, which is warmed by the fragrant spicy notes of aniseed myrtle, cloves, nutmeg and cassia. Hot green cardamom and black peppercorn are carried through in the long nutty and coffee-like finish provided by the soft oils of native roasted wattle seed. Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

This luscious limited, seasonal batch gin is in honour of Little Miss Yoko. Oriental Oomphess and seductress of Victorian-era Little Lon once inhabited the very house our distillery now resides in Would she have embraced this divine double distillate? This exquisitely balanced spirit ringing with tones of citrus and juniper, rounded off with a lychee fruit finish, and concocted specially in her honour?
