Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Australia first smoked gin Bushfire is a smokey, unique gin based on an original London dry gin recipe but with the original ingredients substituted for our own Australian native botanicals. The individual botanicals have been smoked with Iron Bark to uncover a rich, smokey palate with sweet hints of maple.

Tasmanian Apple Liqueur is made from 100% Tasmanian apples crafted into cider and distilled through our copper still in our 1840s stable. Sweet and clean with subtle apple flavours. Tasmanian Apple Liqueur is a perfect after dinner drink served over ice or as a great cocktail base to create a OKD style mojito with soda, mint and lime.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. This secret recipe is combined through our copper stills in the heart of Tasmania to create a delicious liqueur with hints of honey, spice and, of course, lavender. Serve from the freezer, neat, over ice-cream or with soda and ice for a refreshing and special experience.

A warming spice-driven gin with a unique balance of savoury Australian native botanicals and aromatic winter spices. Sweet orange peel, native strawberry gum and macerated lilly pilli offers a gentle yet full bodied sweet backbone, which is warmed by the fragrant spicy notes of aniseed myrtle, cloves, nutmeg and cassia. Hot green cardamom and black peppercorn are carried through in the long nutty and coffee-like finish provided by the soft oils of native roasted wattle seed. Our classic Dry Gin is juniper forward, lightly spiced with coriander and pepper berry. The fennel links the softer notes of the cinnamon, angelica and orange to give this gin a great mouth feel. Enjoy in a classic G & T or on ice.

Our Navy Gin is bold yet balanced, full flavoured and complex Gin based on similar botanicals as our Dry Gin with a few little tweaks. This fuller flavour Gin will bring to life any cocktail with its Navy Strength complexity, but can be enjoyed simply over ice as a sipping Gin.
