Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Like a pinch of salt, these minor ingredients are critical to the end result adding perfume, body and balance.

Tasmanian Apple Liqueur is made from 100% Tasmanian apples crafted into cider and distilled through our copper still in our 1840s stable. Sweet and clean with subtle apple flavours. Tasmanian Apple Liqueur is a perfect after dinner drink served over ice or as a great cocktail base to create a OKD style mojito with soda, mint and lime.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. This secret recipe is combined through our copper stills in the heart of Tasmania to create a delicious liqueur with hints of honey, spice and, of course, lavender. Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.

The finest Bundaberg Rum blended with aged reserves mellowed in heavily charred American Oak barrels with notes of 13 spices, fruit nectars & citrus zest.Bundaberg Rum Small Batch Spiced presents warming aromas of sweet dried spices, notably cinnamon, clove and nutmeg humming over the sweetness of orange marmalade, fresh vanilla bean and dark caramel. Upon tasting, golden syrup, star anise and an earthy, ginger spice, lead to roasted notes of raw cacao flowing across an energised palate escalating to a dry and lingering tingle of black pepper and fresh liquorice.

Four times distilled, made from whey, pure Australian water and charcoal filtering helps to remove any impurities to produce an ultra clean, silky smooth spirit with the finest taste.
