There are many stories about who created the first Negroni. We like to believe it originated in Florence, Italy in 1919 when Count Camillo Negroni asked for a stronger version of his favourite cocktail the Americano (Campari, Red Vermouth and soda water). The bartender replaced the traditional soda for gin, and the world-famous aperitif was born. Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. Weve left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

Billy Goat's Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.

Inspired by the Italian classic Caffè Corretto the beautiful union of espresso coffee with a serve of glorious Grappa. Syrupy-sweet espresso flavours complimented by dark cocoa Tiramisù.
