A lightly peated single malt balanced with rich dark fruit flavours. The Isle of Raasay Distillerys carefully crafted and unique recipe combines peated and unpeated Raasay spirit that has been matured in three different types of oak cask: high rye whiskey, chinkapin oak and Bordeaux red wine. Crafted by hand, this Deanston is first matured in ex-bourbon casks from a family run cooperage in Kentucky, creating its subtle but zesty character. “The elemental opposite of the sophisticated Lord of the Isles.” Perched on a wave washed, rocky headland, the Ardbeg distillery was founded in 1815 by the MacDougalls of Ardbeg. The distilleries scattered white washed buildings are reminiscent of a Dutch settlement and add to the dramatic coastal landscape. Ardbeg has had a chequered history and in recent times had been closed down for many years. Glenmorangie acquired Ardbeg in 1997 and has set about restoring the distillery to its former glory. First launched in 2003, “Uigeadail” (the loch from which all Ardbeg water flows) this cask strength, heavily peated Ardbeg is produced from a mix of bourbon casks and older sherry casks. The combination gives this whisky a velvety texture, with a sweet and smokey finish. Tasting notes: Bright gold appearance. Big, sweet sherry influenced nose offers dried apricot and marmalade scents over menthol and sweet cedar smoke. Some ripe green apple notes emerge with time in the glass. The palate is off dry with a rich, dark chocolate entry becoming heavier and fudge-like with orange chocolate, sweet cereal and the peat continually reinventing itself - at once dry and sooty, then tarry and finally kippery on the finish. Excellent balance at cask strength. Boiled lolly and spice aftertaste with a subtle spearmint fade. Latest batch tasted October 2010.

Tasting note: Nominated as one of the twenty defining whiskies of the past twenty years by Malt Advocate back in 2013, this new incarnation of Arran 10 opens slightly woody and acidic on the nose developing attractive honeyed, chocolatey notes. On the palate, American oak underscores the malt; juicy orchard fruits and vanilla shine through in a fresh, spicy delivery. The finish offers stewed pears and hints of cinnamon. Uncomplicated but very tasty. 46% Alc./Vol. Non chill filtered.

(This whisky has recently been repackaged as a standard 21 Year Old as opposed to its previous incarnation as 'Gran Reserva'). Glenfiddich resurrects the lost tradition of maturing whisky in rum casks with this Glenfiddich 21 Year Old single malt Scotch whisky. Rum distillers from Sancti Spiritus, near the Sierra del Escambray in the heart of Cuba, worked to develop this unique Cuban rum finish. Casks of Cuban rum are decanted at the distillery in Scotland and then filled with 21 Year Old Glenfiddich to absorb the unique character lingering in the wood. The result is the unmistakable Glenfiddich flavour revealed through a new and vibrant overtone.

Her work aligns perfectly with Eden Mill's traditional yet experimental principles. The Balvenie create a unique range of single malt Scotch whiskies hand-crafted in Speyside using centuries-old skills passed down through generations. The Balvenie's' process is a combination of expertise, skill and ambition which is the same now as it has been through generations. Balvenie's use of 5 key crafts is key to maintaining their high standards. Home grown barley, craft of the cooperage of the barrels, the malting floor where the grain is prepared, the copper stills that create the base spirit and the malt master who oversees the refining of the end product. The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards. Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Sixteen years of maturation in American Oak casks brings an abundance of vanilla spice and warm honey notes. The finishing in Pineau casks brings energizing grapefruit, geranium, glazed fruit and ginger. This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials. The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and pealed apple skin. On the palate there is an energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger, with a refreshingly concise finish.

Matured first in bourbon barrels then Oloroso casks, there's no finer example of a sherry cask finish than our 15 Year Old. It's the final three years spent in Oloroso sherry casks that gives Bowmore 15 Year Old the rich, deep colour and robust warming finish.
